Firstly...I am a hugely appreciative eater who has a wife who is a fabulous cook. We are resident in Spain so we are used to the best food and quality ingredients in the world...I have now, through algorithms, discovered the joys of Albert's dishes and the simplicity, and today cooked this, my 4th Spain on a Fork dish, and it was absolutely delicious! And I do say so myself! I adore it that I have recognised the opportunity to cook and serve delicious food to my wife. I am now designated Chef for 2 days of the week, and have SO many more dishes to discover and cook. Albert.... THANKYOU!!

Good morning, I so enjoy eating rice and this has been taken to the next level. Making Risotto takes too long, I do not have the patience but this recipe is ideal. A little preparation and the rest of the ingredients virtually look after themselves and they produce a most warm inviting delicious dish. I made this recipe for lunch today using all the ingredients, including the same smoked paprika you recommended. The dish was filling and flavorful. It was certainly worth the time I invested in making it. The timing recommendations were accurate. I only had to increase the rice cooking time in the broth by about 2 minutes. I'm pretty sure it's because I live at high altitude ( 1900 meters above sea level ). Thanks for sharing this recipe. It's a keeper.

OK, I made it and was the best rice dish Albert has put out. I made the vegetable broth, Manchego cheese (Trader Joes 6 month) and Bomba rice, (spotted short grain rice at Sprouts in the bins, Bomba was from Amazon). Spanish Gambas al Ajillo will go on top tomorrow with the leftovers.

I believe that the Latin American countries of Europe, in addition to having olive oil and good legumes, vegetables and fish, have been fortunate in that our mothers joined the labor market later than in other countries, although for them it was a misfortune. Thanks to this, the Spanish, Italians, Portuguese... got used to eating homemade food. Today in Spain we men love to cook the most, all my friends cook better than their wives and we are the ones who cook. We owe that to the efforts of our mothers to educate our palates.

I’m a fan, but I have to take you to task over the quantity of liquid. I just made it… plus some beef meatballs separately… and the rice was tasty even though it was feta cheese. After 20 minutes, the pan was still SWIMMING in liquid. Steaming would not have been enough. I used Mercadona vegetable caldo in a box ( less 50-100 ml). Eventually had to siphon off a cupful and use it with the meatballs. 750ml is more than enough. However, both the memsahib and I thoroughly enjoyed the creamy texture, which was less about individual grains and was more like the consistency of a risotto. Thanks for the recipe. Yes, every rice absorbs different quantities of broth, but typically the 4 cups (950 ml) gets the job done pretty good for 1 cup of dry rice, even using different rices, but every pan and stove top heats differently, glad you enjoyed the dish :) much love
