Yeah you can call her a sellout but her family's always in the pasta making business and stuff so she definitely knows quality. There's a philosophy of Italian food? When was this? I didn't know we have people like Socrates declaring food philosophy. That's a funny thing to say imo. 😂 And when you think about it why is canned roma tomatoes and tomato paste acceptable when the philosophy, as you say, is fresh ingredients? A tomato sauce is like that but pureed with spices etc. I mean unless you've tried her sauce how can you say it's bad when you don't know? But in any case you're free to not buy it, you can make your own arriabata or other tomato sauces from scratch and use it for the recipe. You don't have to use a ready made sauce.
