Recipe was delicious! A few suggestions: I think I like recipes where the ingredients are listed by weight, at least for the produce. After all, 3 medium beets to you might be 3 small beets to me or vice versa. I followed the recipe with medium beets and decided it would have liked at least five of them, Which is fine but you can only figure that out after you've already added all the other ingredients then have to go back and cook to more beets. I would also suggest 4 to 4 and a 1/2 cups of cabbage. Finally, I simply added all the beets to the insert from the IP after the vegetables had cooked perfectly and I used my immersion blender to make a very smooth puree right in the insert. A real time saver. Flavor was great. At the table, guests added more salt, but it was fine as served for me. Thank you so much!!!

All great suggestions! I feel recipes are just guidelines and can usually be adjusted to suit individual tastes. I quite agree that weighing ingredients is the best practice. I usually have the weights included in the written recipes on my blog, however, I see that I neglected to put the weight of the beets in this recipe. Thanks. I quess this dish varies according to geography. My friend, Nora who is from Russia, says it is the best borscht she has ever eaten. She died at 103. I made it to make her happy, and it did. Danielle

I've read nonstick pots should not be heated without contents in them.

That's probably true. I don't think this is left long enough to be a problem but if you're concerned, you can always use the stainless steel pot that comes with the Instant Pot or add your onions before turning on the heat. Happy Cooking! Danielle
