I made this last night but it turned out I had a lot of cauliflower and not a lot of potatoes. So it was probably half and half. It was delicious and my partner only guessed because I told him he had to guess what was in it. Also, I made it with Esselstyn's "Mommy's Mushroom Gravy". It didn't really thicken up much but it was delicious. Thanks so much for your recipes. I've enjoyed all the ones I have tried so far.

Hi Wendy 🤗 There's nothing better than some creamy mashed potatoes! I have been known to eat them by themselves for any meal or snack. We like to use Yukon Gold potatoes and rather than cauliflower I will add a yam or two and some white turnips....delicious!!!!

Do you make all of this food for a one person household or for a family of four? Do you watch your calories? How do you know if you're eating too much or not enough? Do you weigh yourself? Thank-you for sharing your hard work videos! ❤❤❤😎

I am a one person household, but I often make big batches to freeze or use throughout the week. Something like this mashed potato recipe would serve 6 to 10 depending on how much you eat. I do not watch calories and only periodically weigh myself. I don't worry about how much I eat because everything I eat has such low calorie density, so I can eat very large volumes of food without consuming very many calories.
