i recently was in spain about 2 months ago and had really really nice croquettes out there that where as part of tapas we had a few flavors one was ham and another was beef but i believe the filling wasnt using mash potatoes all croquettes made from potatoes or is there other ways to do it ?

So the croquette is actually the shape and filling of a thicker binding then breaded and fried . Wich is why they say potato croquette as what we are used to in uk , but croquettes can literally be any filling you want but it is usually always of. Thick consistency. I’ve seen croquette using risotto or as in Italy arancini. I’ve also seen versions were the ingredients have been binded with a thick bechamel to give the filling. With a croquette it’s pretty much what ever you can imagine. I’d say now you know the basics get creative but don’t forget to come back and share your results 😀
