Yes you can tell the difference when deveined or not in texture mostly, the vein can be very gritty (probably sand that the shrimp actually ingested).

If you're lucky enough to live near a Korean market, they usually have literal containers of raw peeled garlic because it's used in a lot of dishes. Totally worth the price especially for a recipe like this.

I can tell you that it's not particularly a US thing, nor a 'real chef" or fancy person thing, other than as a chef, you're more likely to deal with various preparations of shrimp, and end up asking the question of "is that shell edible?" (or, "is there something I can do with these shells OTHER than sweat them for seafood stock"?) Looking into it, it shows up every now and again in east Asian cuisines like Japan or China, typically when fried, so it makes sense that Californian chefs might also be experimenting with it more than other regions, given the relatively high profile of east Asian cuisine there.

As a kid, my grandma would always make me peel and devein the shrimp. It’s my least favorite thing to do now, period. I’ve sat with the shrimp for so long my fingers would tingle. Non-deveined or pre-deveined for me, idc. I also eat the shell now, idc. 😂 such trauma
