One of the most delicious operations of pork belly. Crispy pork belly. Babi pangang bacon. Crispy Pork belly. Hopefully the video will give you some inspiration to make this yourself sometime!
Ingredients:
1.5 kg pork belly with rind. Not too thick
Cooking the bacon:
2 cloves of garlic
an inch of ginger
peppercorns
Marinade:
6 cloves of garlic
Ve-Tsin (1/4 TL) (you can also leave this out if you don't like it)
Brown sugar 1/2 tsp
Small amount of salt. The salt on the skin is going to make it salty too, even if you remove it.
So be careful not to make it too savory.
5 spices 1 tbsp
Few drops of sesame oil
Vinegar to clean/dry skin
Coarse sea salt on skin.

tnx dude, dit recept ben ik al jaren naar opzoek. ik ken je niet maar direct een like en een abbo hier. ik ben al 20 jaar kok en ben pas halverwege het filmpje maar dit is fantastisch

4.5 uit 5. Dank het was heerlijk. Elke oven is natuurlijk verschillend. Die grilstand 200C duurde 60min om de lekkere krisp te krijgen. Het was ook goed sappig. Wij eten het in plakjes van 1.5 - 2cm en dippen het in een beetje suiker. Ben je nu aan t volgen ga zo door :D

Dank je leuk om te horen! Ik grill hem nu meestal op een nog iets hogere temperatuur af 220 a 230. Wel goed in de gaten houden want kan iets sneller verbranden

No need to boil it first. Oven at 200 to 220 degrees F for an hour....raise the oven temp to 400 for 30 to 35 minutes.

I boil it because imo it is more tender then oven only. Also i boil it with some spices, because sometimes the pork skin has a funny smell/taste to it and you get rid of it this way.

If you want crispy porkbelly...,it really does not require all that work! Just take raw porkbelly slices, spice them to your hearts content,place them in the oven and cook them until they are crispy,turn them a couple of times during cooking..., they will turn out yummy!

With your way of doing it you have crispy meat and crispy skin, although i doubt the latter being as puffed up as this method. This method you have juicy succulent meat and a puffed up, crackling crispy skin. Imo the best way to eat it.

It's coarse salt. Easier to remove and therefore less salty then when using normal salt

Lijkt me wel als he het er bovenop legt zodat het zo lang mogelijk knapperig blijft. Als het gaat om instant: klein scheutje mirin en een dot miso pasta in de soep ~ 🤌🏼
