Just found this channel and subscribed immediately! Hearing that southern accent surrounds me everyday now that I live in Arkansas. While I don't have the accent, I have a fondness for southern cooking now. I own two different sizes of Crock Pots, depending on the size of the portion I'm cooking. Looks like I will have to drag out the 6 quart for this recipe, and share the meal with some of the fine folks here in my senior community. I've always told my dear, southern ladies here that this California gal can't cook. With your help, I can soon surprise them! M_ Mince08 hope you tried it. . .this is a great recipe and I know you are probably are unfamiliar with the process of searing but it adds a ton of flavor to the round roast. . .the only necessities are beef roast, beef stock, and spices and maybe a handful of carrots if the large amounts of veggies are intimidating.

I love my crockpots. Many delious time saving meals have graced our table. There was one time when I was in such a hurry that I forgot to plug the cord into the outlet. It smelled so good it made me hungry. Fixed mine in a big cast iron kettle on a wood burning stove for 12 hours. Big snow on, neighbors for miles around came over to eat. Loved the gravy!!!!

Sitting here enjoying all the memories of Sunday dinner at my mamaw and papaw's house - always beef roast like this. Awesome! And, folks, you can do this same thing with deer meat/venison. I use a big roast from the hindquarter, and I add about 1/2-3/4 packet of dry ranch dressing. Something about the ranch neutralizes any tendency for the venison to have a "gamey" taste, and it tastes very similar to good beef with its own unique character. My family loves it!

@@CowboyKentRollins I made my pot roast with the cloves of garlic in there, but cooked mine with leeks, onion, carrots, cellery, summer squash, potato, and my shortcut for flavor, a packet of onion soup mix and a brown gravy packet. Its perfection for a easy dinner!

You just increased business at a restaurant that has good pot roast near me. You also gave me a craving for a pot roast po' boy sandwich. To give a laugh, pot roast was my mother's default when she knew she was going to be busy all day; by the time dad, my brother and I got home, dinner was ready. I don't need much more than some bread, a fork and a napkin for good pot roast.

@Jeff H I've had a bunch of them and it seems that one is as good as the next. A word of advice though. I'd get the biggest one you can find. That way you can make big batches of stuff and freeze the extras in meal size portions.

You betcha! My Mom threw one in the ole blue enamel roasting pan with all the same veggies and such early on Sunday morning back in NE Texas. We'd load up, ride the 13 miles or so to the Church we liked, have "Sunday-go-to-meetin' ", ride back, get outa our good clothes and do some livestock feeding chores while she made fresh rolls and that heavenly gravy ...the the prayers and good eatin' commenced! Man, those were the days ...poor folk ate like kings! The preacher and his family joined us once, their was hard to keep 'em away! Bless God, pass the gravy ...and smore more rolls, please! Nothing better!

I do love me some pot roast. Nothing better than cutting up the veggies and browning a roast the night before, drop it in the crock pot as I'm headed out the door and coming home 8-10 hours later with the house smelling of roast beef and dinner ready to eat. My mom passed this last year. She was amazing and after my father died when I was 3 years old she was left with 4 kids and had to go back to work. We had a lot of help and very good people around us, but one thing I remember is how she cooked. We had many meals of soup and sandwiches and many suppers of Manwich and she laid out a loaf of white bread, pot roast was my favorite. Nothing fancy. Roast, cut carrots and large diced potatoes. A bowl of that in winter time there was nothing better expect crumbling cornbread in the bowl. Another staple in our home was potato soup. Another favorite. My mom had a large pot for cooking and when we had no electricity for awhile and she cooked on a wood burning stove. I still have a photo of us in the kitchen sitting around the stove to keeping warm playing with my brother and two sisters. She worked so hard and never did anything for herself. Amazing amazing woman and my sisters and I are all better off because she taught us to treat everyone as equal, do your best always and always work hard! I remember hauling square bales of hay from morning until dark (after 8pm) In the 94 degree heat of middle TN. i am 36 years old and I was about 13/14 at the time. Worked all day in the heat and made $50. I felt “rich” and from that day on if I could make a dollar I did it because money in my pocket equal freedom to do whatever I wanted. Those memories and growing up in those situations have made each one of us better. Love your videos Mr. Rollins they relax me and I enjoy them so much.

Mom made great pot roast. It set on the stove, as kids we got a great dish. Come and get it! We didn't have a crock pot or all that fancy stuff. She did sear the meat in cast iron and then make a pot of roast. The sear made good flavors and taste. Sop up gooooood gravy with a biscuit or "white bread".

Hello Kent, I make my roasts just like you do. The only thing different is I use a slow cooker liner ( bag ) in my slow cooker. Save big time on clean up. Serve the dinner and then for clean up, pull the plastic bag out and and throw it away. You have a clean slow cooker. They are made by Renalds. They come 4 in a box 8 quart size. What a great job they do.

Nice thing about the Dutch oven is you don't need a skillet to sear the meat, just sear it in the Dutch oven. I think they tend to cook faster in the dutch oven, I started it on 325 degrees for the first hour and then 275 for 4 more hours. Of course, campfire dutch oven doesn't have the same temperature control 🙂
