脆皮烧肉汤
食材:脆皮烧肉,高汤 (视频里用的是分装冷冻的高汤块),菌菇,时令蔬菜,香菜,葱,姜,虾米,米酒,橄榄油,白胡椒粉和盐
做法:葱白切段,葱绿切圈,香菜切碎;汤锅下油烧热,加入脆皮烧肉煎热煎香;加姜片和虾米继续翻炒出香味;加开开水、高汤、葱白、菌菇和米酒,小火煮至葱香四溢、菌菇熟透、酒精味减弱;根据个人喜好,加入适量白胡椒和盐调味;盛出后撒葱花和香菜。
Crispy Pork Belly Soup
Ingredients:
Crispy pork belly, broth (frozen broth portions), mushrooms, seasonal vegetables, coriander, spring onion, ginger, dried shrimp, rice wine, olive oil, white pepper powder, and salt.
Instructions:
Cut the white part of the spring onion into segments, slice the green part into circles, and chop the coriander finely. Heat oil in a soup pot, add the crispy pork belly and fry until fragrant. Add ginger slices and dried shrimp, and continue to stir-fry until fragrant. Add boiling water, frozen broth portions, the white part of the spring onion, mushrooms, and rice wine. Simmer over low heat until the aroma of the spring onion fills the air, the mushrooms are tender, and the alcohol flavour diminishes. Season with white pepper and salt according to personal preference. Garnish with chopped spring onion and coriander before serving.
