脆炸普寧豆腐 + 豆腐煎蛋 Deep-fried Puning Tofu and Tofu Omelette **字幕CC Eng. Sub**

🟢材料:
普寧豆腐♦ 4件   
韮菜 2 條
雞蛋 2 隻
蒜蓉適量
米醋 1~2 湯匙
鹽、糖、油、胡椒粉適量
泰式辣椒醬適量
🟢做法:
1️⃣ 脆炸普寧豆腐: 把3件普寧豆腐切成三角形或您喜歡的形狀。
2️⃣ 鍋中放適量油,當溫度達到 160~180 度 (或用筷子測試冒泡) 時,把普寧豆腐放入炸至金黃色,撈出,待油溫再次升高大約 200 度左右時,再把所有普寧豆腐回鍋炸 30 秒,撈出瀝乾油份。
3️⃣ 炸好的普寧豆腐可以沾韮菜鹽水❶、蒜蓉醋❷或泰式辣椒醬食用。
4️⃣ 豆腐煎蛋:把豆腐切成小塊,加入雞蛋、少許胡椒粉和適量的鹽、蔥花輕輕拌勻。小鍋熱油,下豆腐蛋液煎至金黃反轉,底部金黃且輕按中心不軟即可出鍋。
❶韮菜鹽水做法:韮菜洗淨,切去頭部不要,韮菜葉切成幼粒,加入適量的鹽和大約半碗涼開水,攪拌均勻,韮菜鹽水即可做好。
❷蒜蓉醋做法:把少許蒜蓉、適量鹽、糖和 1~2 湯匙米醋混合,加入適量的辣椒(不加也可)。
📌備注:♦普寧豆腐是豆腐的一種,富含高質量蛋白質和豐富的微量元素,普寧炸豆腐是廣東潮汕傳統粵菜。
🟢Ingredients:
Puning tofu♦ - 4 pieces
Chinese chives - 2 stalks
Eggs - 2
Minced garlic - as needed
Rice vinegar - 1-2 tablespoons
Salt, sugar, oil, white pepper powder - as needed
Thai chili sauce - as needed
🟢Cooking Directions:
1️⃣ Fried Puning Tofu: Cut 3 pieces of Puning tofu into triangles or your preferred shape.
2️⃣ Heat a suitable amount of oil in a pot until the temperature reaches 160-180 degrees Celsius (or test with chopsticks for bubbling). Fry the Puning tofu until golden brown, scoop out. When the oil temperature rises to about 200 degrees Celsius, put all the Puning tofu back in the pot and fry for another 30 seconds. Scoop out and drain excess oil.
3️⃣ The fried Puning tofu can be served with Chinese chive salt water❶, garlic vinegar❷, or Thai chili sauce.
4️⃣ Tofu omelette: Cut the tofu into small pieces, add eggs, a small amount of white pepper powder, and a suitable amount of salt and chopped scallions, gently mix well. Heat oil in a small pan, add the tofu egg mixture and fry until golden brown. Flip the omelette over and cook until the bottom is golden brown and the centre is lightly pressed but not soft.
❶Chinese Chive Salt Water:Wash the Chinese chives and removing the heads. Cut the leaves into small pieces and add a suitable amount of salt and about half a bowl of cooled boiled water. Stir well to make the Chinese chive salt water.
❷Garlic Vinegar:Mix a small amount of minced garlic, a suitable amount of salt, sugar, and 1-2 tablespoons of rice vinegar. Add a suitable amount of chili pepper (optional).
📌Note:♦ Puning tofu is a type of tofu that is rich in high-quality protein and abundant micronutrients. Fried Puning tofu is a traditional Cantonese cuisine from the Chaoshan region.

非常欣賞蛋餅做法,用㷛仔煎跟平底鑊效果和口感截然不同,雖然是簡單平民食材,也可以做到如此吸引,真要俾👍💯

蛋餅用小鍋煎要注意一點, 落蛋漿後火要轉細一些, 要有時間讓它熟透(因為有厚度)但又不要煎燶, 謝謝您收看🌻

這種普寧豆腐未試過用氣炸鍋做, 如果氣炸一般硬豆腐要上些生粉/麵粉, 然後在表面噴些食油, 油炸氣炸效果差不多🌻

I would use a larger pan to make Tofu Omelette as it will be easier to handle when flipping the omelette. However, the deep-fried tofu is perfect. Thank you for sharing.

Taufu fried eggs is kinda new to me. I would try it one of this day if I could get fresh tauhu from the wet market. Your cooking is simple and nice. 👍🏻😋

Puning tofu is one type of tofu which headstream in Chiu Chow(潮州), almost can buy it in all wet market of HK, thanks for watching!

煎蛋大火燒紅鑊, 下蛋轉小火這樣煎出來蛋很滑, 中國很聰明, 黃埔炒蛋大火燒紅鑊, 下蛋立即熄火, 炒熟(不把蛋翻身). 這個綠色煲仔在citysuper 買的.
