Ok, food junkie followers, I got a secret to share with you, I love cucumber and vinegar. There, I said it. In the summertime, we eat this weekly. It is especially good if we have fresh cucumbers. This is my way of making cucumber and vinegar.
Sometimes I make it just like it says, with cucumber and vinegar. Other times I juice it up a bit as I did in this video. On a side note, these are not true quick pickles but they go by this name sometimes.
They also go by refrigerator pickles sometimes too. Most of us around here just call them cucumber and vinegar. Give it a try and see what you think.
Once late May hits in the south, the cucumbers start ripening on the vine. It is the time to enjoy one of the best summertime side dishes. Marinated cucumbers onion & vinegar is a great dish that is so simple and easy to make and a great way to use up those fresh veggies.
You can only eat cucumbers in so many ways. Fresh, cut up on salads, in pasta salad, and there aren’t many more ways to enjoy them. That is why this easy cucumber salad is such a treat. Whip up this quick vinegar mixture and place them in a serving bowl and you are in business!
It gives you another option to use up all those fresh crisp cucumbers you have coming off the vines. There truly aren't many things better on a hot summer day.
The sweetness of the fresh cucumbers combined with the tart and acidic nature of the white vinegar. Cut up a sweet onion and add a little bit of sugar to help cut the acid in the vinegar and you have the basic recipe.
This dish goes by a few different names depending on where you live. Some call it quick pickles or Overnight Refrigerator Pickles. It may also go by the name Cucumbers and onions in vinegar, cucumber salad, cucumber with vinegar salt and pepper, or cucumbers and vinegar. You may also see it called cucumber and onions with vinegar and sugar or cucumber salad. After watching a KZbin video on this recipe for many years, I discovered that this dish is very popular in the Philippines as well. In that country, it may be called Ensaladang Pipino, Pipino with Suka recipe, or Asian Pickled Cucumber.
You could really stop right there and you would have an easy cucumber salad recipe, but we like to add in a few fresh herbs to heighten the flavor. Below we will go over all the ingredients we like to use for the best results for this simple recipe.
INGREDIENTS
4 cucumbers
1 onion
1 cup vinegar
1 cup water
1 teaspoon dill weed
1 teaspoon Sugar
1/2 fresh squeezed lemon juice
1/2 teaspoon salt
1/2 teaspoon pepper
INSTRUCTIONS
Slice Cucumber. If you prefer you can peel them as well.
Slice onion
mix water, vinegar, sugar, lemon juice, dill weed, salt, and pepper in a bowl
Add in onions and Cucumbers
Set in the refrigerator for an hour or two before eating.

I CANNOT believe that you just made cucumbers & vinegar like I ate allllllll my life!! I was born & raised in PA, near Pittsburgh. My mom always made these with meals..esp when we would have sweet yellow corn on the cob in late July & August. What a great thing to see again!! I thought it was only us who ate these!! These are delicious!! TY! ❤

Same here.. I’m from SWPA and I thought it was some magical thing my mom did( she wasn’t much of a cook lol) I loved onions and cucumbers, she put them in big glass jar in the fridge. They were bomb❤️

My Gram used to slice cucumbers then add vinegar, salt and pepper. I loved it. I thought it was just a weird thing we liked and until this video I never knew it was actually something other ppl did lol.

That is how we eat ours too about 95% of the time. During the summer, we eat them this way at least once a week! I thought it was a southern thing but not sure where it actually came from. Thanks for sharing your story with us!

There are quite a few things that I thought were things that my family just did or made. Pickled cucumbers and onions, macaroni and tomatoes, slumgullian (goulash), hamburger steak, butter on saltines... Those are just a few. My family was from Pitcher, OK. They moved to California when my mom was 8.

You put more stuff in yours, but I loved this growing up as a kid. My mom would make it frequently for me. All we put in ours is just the vinegar, salt and pepper though. Still, it's so good! I even used to drink the vinegar when I was done.😂😂

This is a great and healthy way to eat cucumbers from the garden, especially when you have a bunch. We enjoy making this similar recipe to get our daily dose of vegetables in. Looks like we eat similar things. Keep up the great job!

Yes we eat these a few times a week when it’s the summertime! Most of my garden is about done. I got some tomatoes coming on and okra is doing good.

Yes!!! I love seeing the amount of people who grew up with this as well. I’m in AZ but my family is from the Midwest. We do cucumbers, onions, vinegar, water, salt & pepper! We use ACV specifically bc it’s good for the tum and it’s always been one of my faves since I was little 😊

Yes, we put tomatoes in it too sometimes. That is the beauty of it, you can mix and match different things. Regular pickles have sugar in them, it just helps cut some of the acidity from the vinegar. You really can't taste it much. Man thanks for stopping by. I hope you are doing good.

You can play with it and make it how you like. 9/10 we just cut up cucumbers add in half water abs half vinegar. Salt abs pepper and that’s it! Very clean refreshing dish! Thanks 🙏

Theses are the best I used to work with an old Korean man in a restraunt and he used to make these for us to snack on. He said they would make them as a bar snack in Korea, just like how places have peanuts in Korea they would have this.

Yes they are good with other veggies too. These are not the true quick pickles in the since but some ppl call these that so that is why I threw that in there lol. I love both types though honestly. These are really really quick to make and make a great side dish to just about anything.

My family had been eating these for generations. We just call them pickled cucumbers. Vinegar, some water, pepper. That's how we make them. My mom keeps these in the fridge all of the time. We are never out of these!

I used to think this was something only my family ate. I come from a mixed race family so we all have a different way of eating it but they all start with a simple base of cucumbers, vinegar, salt and pepper. My mom is half black and korean her dad eats it with kimchi, her mom eats it plain some of my aunts and uncles are half haitian and they eat it with pikliz, my dad is mexican he adds tajin or just eats it plain and I was the first one in the family to add a packet of orange kool aid, my younger siblings eats it the way I do with the tajin and orange kool aid and my mom eats all versions but it depends on what we have in the fridge or cupboards at the time

I’ve eaten this since I was a kid but mom mainly just used vinegar mixed with a little water and that was it. 98% of the time, that’s how we eat it too. I jazzed it up a little for this video. Im a Filipino and fruits with vinegar are the best, Watermelon, Mangos and Cucumbers are my favorite, especially Watermelon cus it has a sweet taste, then for Mangos its sour and the salt balances it

Yes sir. They are a great summertime snack. Man I hadn't forgotten about that pizza dough you shared with me. The one in the bread machine. My Grandma uses Walla Walla sweet onions here in the Northwest or for folks in the South Vidalia onions. Have you used Vidalia or something else?

Yes love done Visalia onions. The real o we are seasonal though. We use red onions or white onions sometimes in this dish if we can’t get sweet or Vidalia onions.

I'm definitely going to try this. I saw that you added bell pepper to your other pickle video, and red pepper flakes. Have you ever tried adding a jalapeno pepper? Just curious because I love jalapenos. This is the first time I have watch pickling videos. Very good!!!

Please forgive my dumb question, but the " 1/2 fresh squeezed lemon juice " is confusing to me. Is it simply the juice from 1/2 of a lemon, or...1/2 (cup?) (Tablespoon?) of juice from a lemon, not a bottle?

Ever noticed when you buy pickles in the store they still have the skins on them? It’s because that’s where all the nutrients are you just carved off almost all the nutrients.

I was under the impression that they kept the skins on to keep them from going bad??? Dude I eat the skins but kids don’t like them. They can be bitter and done recipes call for removing the skins. Same as potatoes. I like to eat the skin from a baked potato but most people don’t. I like to eat the peelings on apples but some people don’t. Food is very subjective. That’s why we have so many recipes and variations.
