happy to help! In my video descriptions I also include Andres' whatsapp number as he's a national guide based in Cuenca. Everything I know about Ecuador is really because of him. Great video! I love Ecuador (at least as I have seen on videos)! I can't wait to visit this year! I have to confess that the serving with hands touching the food is quite foreign to me. Is hand washing a common expectation in these type of markets? Just trying to put my germaphobia to rest lol.
@ayngelina2 жыл бұрын
Some people in the market use gloves if that's what you prefer. Although to be honest in many restaurants in North America people use gloves but then they still touch tons of non food items. I actually prefer that people not wear gloves and instead wash their hands. Hand washing is definitely expected. Even when you go to the washroom, you have to pay 25 cents but the attendant always has soap and paper towel and the markets that have attendants are really clean.
@dianaandcareypearman85842 жыл бұрын
@@ayngelina Thanks! Yes, I often see people in Canada using gloves to touch food, then grubby money, and back to food...definitely no better than using dirty hands lol. Ayng. Is the Ecuadorian Aguardiente like the Colombian version that is anisé flavoured?
@ayngelina2 жыл бұрын
No it’s actually more like guaro in Costa Rica and cachaca in Brazil which are also made from sugar cane. Actually that’s a great distinguishing factor as Colombia is the only one to use anise. And that flavour I’ve only really seen elsewhere in South America in Argentina in fernet. The regular kind has no flavour. Although they also have fruit flavoured versions but I think mostly young people drink it. There is also a real movement to create high quality aguardiente and some of it is aged, which is why I don’t like to call it unaged/young rum. But in Cuenca I’ve featured a restaurant/bar called Chiplotle (not a typo, letters are twisted so they can avoid a copyright suit), they make cocktails using Canuto which is an aged cocktail. It’s really interesting because aguardiente was once a spirit that Ecuadorians felt that you drank if you couldn’t afford anything better. But that is changing and I really love this movement.
@michaelreid88572 жыл бұрын
@@ayngelina isn’t that true of many foods as well? Ribs and Ox Tails were given to the Slaves. Quiche was a peasant dish made from farm staples! Thanks for explaining this to me. Can’t wait to try some. Sounds almost like moonshine Ecuadorian style!
@ayngelina2 жыл бұрын
Not all aguardientes are the same. Each region in Ecuador has its own well actually Cuenca has two. But my favourite is Cana Manabita from Manabí, it's widely considered to be the best. Definitely the smoothest.

sorry I didn't see the chicken. What is the best way to get from Cuenc to Paute? Bus or maybe hire a car or car and driver.
@ayngelina2 жыл бұрын
Best depends on what you want to achieve. Bus is cheapest and longer. Driver is faster but more expensive. I don't recommend renting a car unless you're accustomed to driving in Ecuador. But a driver costs about the same as a car rental.

Yes or not angelyna, that Ecuador has medium towns and cities to live quietly??? It gives me the feeling that they are beautiful villages for those who like to live quietly. They are clean, there is food of all kinds and cheap, I do not think there are other cities in South America with the attractions that the towns have in Ecuador, there must be, perhaps in Argentina or Chile. I like the Ecuadorian Sierra. Perhaps a point against is the altitude but over time the body gets used to it
@ayngelina2 жыл бұрын
Paute is significantly lower, and definitely warmer. I think most people could adjust to the altitude and you know it's good for your lungs! I love all the smaller towns most people don't know about, they are all so interesting and have great food.

@BigTimeZergRush Жыл бұрын
12:35 I wouldnt say the apples are organic unless you really trust and know the seller and have seen how he/she grows the apples. Everyone I know who grows apples here, spray the trees to make all the leaves fall after the harvest. Its done to simulate a winter where the tree goes dormant and drops all its leaves... Not the worst thing to spray since you wont really eat the chemical, but still not organic.... Awesome video though :D
