Thank you so much, Rik. For some reason, I usually feel a wee bit down after my physiotherapy, but as always, you bring a huge smile to my face. The last time I had Cumberland pie was around 25 years ago, when I was married to a Cumbrian lass. As always, you've tweaked it to your own style. I've only one complaint, you are assisting me to pile on the weight 😂😂. Thank you, I always await your daily video in anticipation of another excellent meal.

That looks lovely. Your breadcrumb idea reminds me of my grandmother who used fine plain breadcrumbs in her apple strudel to soak up the juices and it worked beautifully. Never occurred to me to use them in a savory dish like this. Thank you so much!

I can't wait to make this. It reminds me of Shepherd's pie with the potatoes and cheese on top, but I love the combination of sausage and apple and I also love the layer of panko crumbs. That gravy looked essential -- perhaps you have a video that describes how you make it. It looks a bit thinner than a roux gravy, and looks delicious.

I made squab pie in domestic science many decades ago, it was made with pork sausages, apples, onions and mashed potatoes. it was delicious. Thank you for this video.

Those flavours just work together. I have been making all my own sausages for a few years, and regularly make a pork & leek or pork & apple. Never made a pork, leek & apple ..... yet. Will rectify.

Ooh I miss Cumberland sausages. I must get some when I go to U.K. next. This looks amazing Rik. I’ve been making so many of your recipes, the Mr bought me a nice kitchen machine, mixer bowl malarkey it makes the cakes, breads etc so much easier than using my poor old hands that’s for sure. He also says he’s going to have to limit my watching your videos because as much as he loves everything, his waist doesn’t 😂

Can't get Cumberland sausages here in France easily so we ended up with herb sausages and added some mustard powder into the apple mix. Cheated a bit using frozen mash but it was really great! Yet another classic recipe, which one could say why didn't we think of that. Thanks very much Rik.

I haven’t seen a dish like that, I would love to try it. I sometimes fry liver with onions and apples, served with mashed potatoes. Meat and apples to together very well.

Lovely. I like food history & cook a lot of historical dishes. So always makes me sad that we rarely pair fruit & meat as much as we used to. Some still go together, tomatoes, apples, lingonberry or redcurrant. But its rare. Was thinking as I watched you make this delicious pie, that dried apricots would be a good analogue for the apples. May have to add a wee bit more liquid though. All these great meals you're doing are perfect as the weather is getting colder, will be having this for dinner this week.

I've been using your sausage method for a while now and it really does work a treat at enhancing the flavour and texture. Unfortunately a lot of sausages in the UK now don't have a casing so they can tend to stick or go knobbly - still works though. The method makes sense though as a lot of good, high meat content Europen sausages are pre-boiled, Bratwurst for example.

That is similar to the cabbage,onion,and apple combo I use with pork.Mashed potatoes go well with it too.I saw chicken sausage with apple the other day,I can’t remember if I bought that one,I must check my freezer,I did buy both chicken brats,and Italian,I think the other was chicken,and cheese.😊

@@BackyardChefthe combination of pork and apple in a hand raised pie is already in existence and known as a Fidget Pie, which is usually produced entirely encased in a hot water pastry crust. I don’t know if this would be the answer to the previous comment about a “hand-pie”.

Hi Rik, this is an intriguing recipe (an idea for the Bramley apples that we get in our garden from our one remaining ancient apple tree from an orchard that dates back to the Norman times - it’s chronicled in the Domesday book) I usually use the apples for Xmas mince meat. One question about how you cook up your Cumberlands: while we do get the bangers from time to time, we mainly get the Cumberland chipolatas, can we cook our chipolatas up the same way (oil and water)? I really notice how you "chuck" things in the pot :) We Yanks usually say "throw"...just an interesting observation. I find it interesting noticing the variations of all the English speakers across the globe. As far as this recipe...it's a dandy...good one Rik. Unfortunately, I have to make my own Cumberland sausage when I find the time (I have to either order or make rusk), it's really hard to find around here or in most parts. A quick storebought brat would sub in a pinch I'm thinking. Again...this is a good one, I would eat this at least once a week :)

I made this last night. The leek, onion, apple combination is inspired. I didn't add cinnamon as I'm not fond of it in savoury dishes. I think the panko breadcrumbs on top would be nice. I'll be making this again. I wonder if it would work with meaty fish.

Hi Rik, Come Mate! you and Finese go together like Pork and Apple, i think this filling would make a decent pastie or a medium pie with flaky/puff pastry and you could still mix alittle cheesy mash as bulk filling on the top/bottom, what do think buddy a go-a or faffy idea.

If I may make a suggestion, you could add a handful of raisins or sultanas pre soaked in your preferred alcohol to the apples instead of the cinnamon for an added flavour bomb or for a child friendly version plump the dried fruit in apple juice or a low alcohol cider/ apple cider vinegar.

Have you ever done devilled kidneys rik apparently it was a breakfast item for upper class british people in victorian times. But in 2024 its readily availble and to make for us mere peasents and woodsmen 😂

Love deviled kidneys,I make them all the time,use to make them with lamb kidneys,but they are very hard to find these days,so I now make them with pork kidneys,sourced from the Chinese supermarket,and they clean them for you,which is very helpful.😊

Is 'Cumberland' the name of the area the recipe is from? Is it a style of sausage? What type of sausage is it, please? A mild Italian sausage? A brat? We have a UK import store a couple of towns away, here in Massachusetts, USA and they sell sausages. I want to have the correct type. I think I would chop a few tbsp's of fresh sage and drop that in to the apple, leek onion mix last minute. Apples and onions and sage!😁 Thank you for helping this yank get the correct ingredients! I want to do your recipe justice!😊

I Googled and it said if Bangers are not accessible, use a bratwurst as it is mild, like English Bangers. Sorry for all the questions. That looks delicious!

Cumberland is an area in the UK - Cumberland sausages have their own spice in slight changes on the ordinary banger. Brats will work just fine here. Thank you. Best, Rik

Reply to Myself!! Due to "Circumstances beyond my Control", Saturday is a No No, and Cumberland Sausage is off the Menu. So, it's Friday and Pork Chipolatas but it's a taster I'm looking forward to. I'm an 82 year old bloke and I just love messing about with different ways of cooking. I wasn't built for Hammers and Spanners,. (NO, I do NOT bat for the other side!!) They just baffle me.

Probably a stupid question... but I don't understand all the different onions. I have never bought anything but white/yellow onions, red onions, and sometimes a Vidalia. But recipes everywhere call for onions, leeks, green onions, shallots, etc. Why? Is there really a difference? An onion is an onion, isn't it? Btw.. great recipe.. pork goes so well with onions, apples, and cheese. And sweet potatoes. :) I used to take slabs of sweet potatoes, slices of apples, slices of onions, and boneless pork chops... coat them all with oil and a spice mix (like Italian spices). Then I would stand them all up in a row in a pan and bake. Awesome flavors. Shirley in NH

@@reginaweiner3817if I may suggest you could either speak with a local butcher/ sausage maker, about creating a Cumberland style sausage for him to sell, or you could make a mix of such a style of sausage for yourself and include some diced apples in your recipe. You can obtain sausage skins from a few sources of butchery suppliers and have them sent out by mail order on line. This is also a source for a range of seasoning mixes for homemade sausages and they also can supply a small scale sausage stuffing machine or you can just use a plastic funnel to stuff your own skins.

@@andrewcoates6641 Thank you. I also have gear for sausage making, and I just bumped into a recipe for Cumberland sausage on YT in my possession. From the outside it looks like German Bratwurst, but that gravy and the spices are in another dimension.
