I can't wait to make this. It reminds me of Shepherd's pie with the potatoes and cheese on top, but I love the combination of sausage and apple and I also love the layer of panko crumbs. That gravy looked essential -- perhaps you have a video that describes how you make it. It looks a bit thinner than a roux gravy, and looks delicious.

Can't get Cumberland sausages here in France easily so we ended up with herb sausages and added some mustard powder into the apple mix. Cheated a bit using frozen mash but it was really great! Yet another classic recipe, which one could say why didn't we think of that. Thanks very much Rik.

Lovely. I like food history & cook a lot of historical dishes. So always makes me sad that we rarely pair fruit & meat as much as we used to. Some still go together, tomatoes, apples, lingonberry or redcurrant. But its rare. Was thinking as I watched you make this delicious pie, that dried apricots would be a good analogue for the apples. May have to add a wee bit more liquid though. All these great meals you're doing are perfect as the weather is getting colder, will be having this for dinner this week.

I've been using your sausage method for a while now and it really does work a treat at enhancing the flavour and texture. Unfortunately a lot of sausages in the UK now don't have a casing so they can tend to stick or go knobbly - still works though. The method makes sense though as a lot of good, high meat content Europen sausages are pre-boiled, Bratwurst for example.

Hi Rik, this is an intriguing recipe (an idea for the Bramley apples that we get in our garden from our one remaining ancient apple tree from an orchard that dates back to the Norman times - it’s chronicled in the Domesday book) I usually use the apples for Xmas mince meat. One question about how you cook up your Cumberlands: while we do get the bangers from time to time, we mainly get the Cumberland chipolatas, can we cook our chipolatas up the same way (oil and water)? I really notice how you "chuck" things in the pot :) We Yanks usually say "throw"...just an interesting observation. I find it interesting noticing the variations of all the English speakers across the globe. As far as this recipe...it's a dandy...good one Rik. Unfortunately, I have to make my own Cumberland sausage when I find the time (I have to either order or make rusk), it's really hard to find around here or in most parts. If I may make a suggestion, you could add a handful of raisins or sultanas pre soaked in your preferred alcohol to the apples instead of the cinnamon for an added flavour bomb or for a child friendly version plump the dried fruit in apple juice or a low alcohol cider/ apple cider vinegar.

Love deviled kidneys,I make them all the time,use to make them with lamb kidneys,but they are very hard to find these days,so I now make them with pork kidneys,sourced from the Chinese supermarket,and they clean them for you,which is very helpful.😊

Is 'Cumberland' the name of the area the recipe is from? Is it a style of sausage? What type of sausage is it, please? A mild Italian sausage? A brat? We have a UK import store a couple of towns away, here in Massachusetts, USA and they sell sausages. I want to have the correct type. Probably a stupid question... but I don't understand all the different onions. I have never bought anything but white/yellow onions, red onions, and sometimes a Vidalia. But recipes everywhere call for onions, leeks, green onions, shallots, etc. Why? Is there really a difference? An onion is an onion, isn't it? Btw.. great recipe.. pork goes so well with onions, apples, and cheese. And sweet potatoes. :) I used to take slabs of sweet potatoes, slices of apples, slices of onions, and boneless pork chops... coat them all with oil and a spice mix (like Italian spices). @@reginaweiner3817if I may suggest you could either speak with a local butcher/ sausage maker, about creating a Cumberland style sausage for him to sell, or you could make a mix of such a style of sausage for yourself and include some diced apples in your recipe. You can obtain sausage skins from a few sources of butchery suppliers and have them sent out by mail order on line. This is also a source for a range of seasoning mixes for homemade sausages and they also can supply a small scale sausage stuffing machine or you can just use a plastic funnel to stuff your own skins.
