Cookie Cups
Preheat Oven to 170C fan assisted (190C non fan)
120g Soft Unsalted Butter
170g Light Brown Sugar
1 Egg
1/2 tsp Vanilla Extract
250g Plain Flour
1/2 tsp Sea Salt
1/2 tsp Bicarbonate of Soda
Ganache Filling
100g Dark Chocolate
100g Double Cream
Flaked Sea Salt (we recommend Smoked Salt)
Swiss Meringue
3 Egg Whites (approx 115g)
Double Egg White weight for Caster Sugar amount (eg 230g)
1/2 tsp Vanilla
