Curried Chicken Dinner

My grandmother always loved curried chicken and rice and she made it very often. I cannot remember ever tasting it because back in my teens I was much more of a picky eater than I am now. We have a wonderful Thai restaurant in our town that serves curried dishes-I think I will try something curried the next time I go to this restaurant and if I like it I will try to make this recipe here at home.

Another wonderful recipe! I love how you manage the issues of portion control and leftovers. Although it seems as if you must have a cavernous freezer somewhere. Sadly, my limited freezer space doesn't really allow for that kind of storage (it's one of those side-by-side refrigerator/freezer designs that's just woefully inadequate). But even just separating out the portions for the next day/night is really instructive from both a portion control and time management standpoint. As always, thanks for all you do! Cheers!
