These take me back to my childhood days in India 😊 The thing about these, and many other Karnataka recipes, is that we make the main vegetable star of the recipe, unlike many north influenced recipes where everything is based on tomato paste, ginger garlic paste and gram masala with onions, green peppers and carrots. You take any of these palyas in this video and replace with another vegetable, it stands on its own. For example, cucumber, mangalore-southekayi, chayote, beets, etc. i just love these simple side dishes.

This is a myth,even being from North, my mother never ever added tomatoes or ginger garlic paste to the vegetables, she would always say that if all this is added to the vegetables, how will we get the real taste of vegetables, please don't be misled by false information, even in North, specially in MP & UP, people eat very simple & satvik food only on daily basis

Very healthy recipes. Thank you for the videos. I would like to add two more to this. Using chow chow (Seemebadanekayi) instead of pumpkin, make palya in the same way as shown for pumpkin. Substitute gorikayi (cluster beans) for alasande and prepare in the same method. We in the south part of Karnataka including Bangalore, prepare a palya with sabbasige soppu, hurulikayi and thogari bele, take out the water after boiling them and make bassaru from that with the palya as side dish. Bassaru goes very well with mudde and rice.

Sorry, as this video uses kannada names for the dishes I just wrote. About chow chow and cluster beans there shouldn't be any problem in understanding. The third dish in the video uses toor dal (thogari bele) and dill leaves (sabbasige soppu) to make palya ( sabzi). This we make adding green beans ( hurulikayi) and make. The water in which we boil the dal, beans and dill is used to make a thicker version of rasam. This is called bassaru. It goes well with ragi balls ( mudde) which is a staple in our part and rice. All of these are some of the very healthy and diabetic friendly recipes.

All vegetables good. Few suggestions We don't use onion in dill bhaji. Garlic and moong dal is used. It should be cleaned thoroughly before cutting. Pumpkin skin is rarely removed. Thanks for sharing the recipes.

Pumpkin ranks high on the glycemic index at 75, but low on the glycemic load at 3. People might assume that it is bad for diabetics because of its high GI, but that is not true. Its low GL rank indicates that having a small portion of pumpkin is perfectly safe and will not drastically increase your blood sugar levels
