In the Philippines, we call that purple sweet potatoes as UBE. Everyone knows came from the Philippines. We add condensed milk and heavy cream with butter and sugar cook in the pan until thicken. We don't add corn starch like you did. If you place them in the pan, over time it will dry up into a thick goey UBE dessert. We love this dessert in the Philippines.

Hi there I followed your instructions and I was delighted of the results , I just want to thank you for sharing your expertise in this somewhat difficult recipe But all worth it! I’m now a subscriber! My only question what’s the purpose of lime water? ,compared to just using plain water?

Thank you very much for visiting I am very pleased for sharing. For lime water, it makes the snack crispy longer. You can use cold water instead.
