This curry mixed seafood is the perfect quick meal for a weekday or weekend. The eggplant in this dish is totally optional but helps to stretch the meal if your family has a hearty appetite and you only have one bag of seafood. I usually buy the seafood medley at Bj's at a very affordable price. This meal is not only comforting and delicious but budget friendly and comes together quickly.

Happy to hear that this is a combination you will try. I used to wonder the same thing until I decided to curry it and then later on it wasn’t enough so I had to add the potatoes, another time I had baigan on hand and thought why not?? - And that’s how this recipe was developed. 😀

It’s not for the skin Ria, some eggplants just don’t turn tender. We never peel the eggplant in Indian cooking. I have also observed that if I add the tomatoes earlier the eggplants don’t get tender. So nowadays I add the tomatoes as soon as I see my eggplants starting to soften down. Probably the acidity from the tomatoes have some reaction with the eggplants and they do not soften down. God knows what chemistry but this is what I have observed. Heard your puppy barking, I love your puppy. Your channel is reaching 100k Ria !!! Have a wonderful weekend my friend.
