Loved watching this . The tuna we have here in the south of Spain are the migrating blue fin, caught using a series of traps. It's called the Almadraba. The butchery is called a ronqueo. It comes form the Spanish verb - roncar - which means to snore. When the knife passes along the backbone of the tuna it sounds as if it's snoring! Just as in your video towards the end! Love it!

Hey Nick, yes very simple and clean way to cutting Shibi and Aku. By the way, if you don't fry the bone or soup the head, I am sure you might have some neighbors that would love to soup the bones and head or fry the bones. Keep the lines tight and fair winds and following seas.

What you to achieve sushi grade is to freeze for at least 24 hours. FDA recommends 7 days. If you are going to do this, make sure the Aku is bled and iced down immediately

Also ice it down right away. When you are ready to cut this fish, wash it with cold water as well as the cavity taking care to remove the blood line next to the bones. Carefully fillet and remove skin. Do not rinse in water at this point. Vacuum seal and place in freezer. If you rinse the fillets in water, it will start to deteriorate and the meat will brown. When you are ready to cut for sashimi or poke, just partially thaw. Easier to cut that way! Make sure your knife is sharp! Hope that helps.

That is bad info. DO NOT FREEZE FISH FOR SASHIMI! The parasites that are in most aku and tuna are harmless to people. We refer to it as sash. It will not hurt you if consumed. We all eat it raw but can be cooked if you prefer. Cut fish and always store. In ziplock bag with paper towels to soak up excess moisture. Change paper towels daily. If fish is fresh will last a 3-4 days like this. 🤙
