D.I.Y All the Time! Homemade Bread (No Loaf Pan)

Hello everyone (: I went ahead and added the recipe down below, so it would be easier for you to make some homemade bread of your own P:
Ingredients:
- 7 Cups Flour
- 3 Cups Luke Warm Water
- 2 Tbsp Instant Yeast (2 packets)
- 3 Tsp Salt
- 2 Tbsp Oil
__________________________________________________________
Directions:
- In a large bowl, pour 3 Cups Luke warm water and add 2 Tbsp of Instant Yeast, whisk together
- In mixing bowl, add 7 Cups Flour and 3 Tsp Salt, whisk together
- Add 2 Tbsp Oil to Flour, whisk together
- Form well in center of dry ingredients
- Add water/yeast to dry ingredients
- Mix dough 3-5 min. check consistency.
*If dough dry add 1 Tsp of water at a time
*If dough is too tacky add a pinch of flour at a time
- Continue to knead dough until dough becomes perfect tacky consistency
- Knead dough into ball
- Place dough in bowl, cover with cloth
- Proof dough in oven for 1 hr
*To proof dough. Place dough in oven with a cake pan full of boiling hot water on separate rack
- Separate dough into two parts
- Form dough into preferred shape, round loaf or baguette, cover with cloth
- Proof dough for another 30 min. having boiled water once again
- Bake at 400° for 40 min or until golden brown

Proofing: I do it in my microwave with a big cup with boiling water on each side to create heat and steam. I get a much better rise. I also sift my flour before mixing. That too gives you a good rise and a tender texture.

I tried this and it ended up really well. I didn't like the yeast i used (the taste? I don't know maybe its the brand) but i really liked how it looked and baked.

I agree with all of this. I'm thinking maybe there is too much yeast in this recipe. 🤷

what instant yeast brand did you use?

Yeast brand doesn't matter, just be sure it's not old: measure water needed for recipe and heat to 100-109° max. Put the yeast in, sugar from your recipe, stir and wait til you see it bubble / thicken, only takes 5 minutes. If it doesn't change, the yeast is not good. If it does, proceed with the rest of your ingredients/recipe. Store yeast in frig or freezer. I use Fleischmann's or Red Star, usually Active Dry as I always test freshness. Self Rise can be used/mixed in immediately but I don't trust yeast til I see the bubbles. 1 packet= 1/4 oz / .9g/ 2 1/4 teaspoons= usually $1. Also available in a 4 oz bottle.

Couple tips when filming: please do not film your stand mixer, up close, while it’s in use. It’s very harsh on the eyes and dizzying ... I could have fast-forwarded that part but you were giving instructions so I just turned away and listened. When filming up close it must always be in focus and no motion (spinning, fast up and down, etc). If there’s motion just move the camera back ... There are various techniques but just keeping it simple is always best. Good luck with your channel and btw, your bread looks delicious! 😊
