Ingredients You’ll Need: 1 large butternut squash (about 3 pounds), halved vertically and seeds removed 1 tablespoon olive oil (plus more for drizzling) 1 teaspoon salt 2 heads of garlic, pressed or minced 1 teaspoon maple syrup ⅛ teaspoon ground nutmeg Freshly ground black pepper (to taste) 3 to 4 cups (24 to 32 ounces) vegetable broth (as needed) 1 to 2 tablespoons butter (to taste) Directions: Start by cutting off the top and bottom of the butternut squash, then slice it down the middle lengthwise and scoop out the seeds. Set the squash aside. Chop 1 onion and mince 2 garlic cloves. Score the flesh of the squash with shallow cuts in a crisscross pattern, drizzle it with olive oil, and season with salt and pepper. Place the squash, onions, and garlic on a baking sheet and roast in a preheated oven at 400°F (200°C) for 40-50 minutes, or until the flesh is tender and caramelized. Once the squash is done, scoop out the flesh and place it in a mixing bowl or blender. Add a drizzle of maple syrup, the chopped onion, garlic, and 3-4 cups of vegetable broth (start with 3 cups and adjust for your desired consistency). Blend everything until smooth. Pour the blended soup into a pot and simmer over low heat for 5-10 minutes, stirring occasionally. Stir in 1-2 tablespoons of butter for a rich, creamy finish.

It really is a great base for soo many soups, but is amazing on its own too. If you make it thicker, you can use it as a dip. :)

Looks good! One thing I also do is save the seeds for planting - given the cost of groceries going up constantly, I garden in deck pots every chance I get. Just something for the viewers to consider.

Hey dad! I am subscriber who really comments but and i would i like to thank you! I do have a present and very good dad and mom, but both of them are usually very busy from my childhood, hence most of the times i was raised by my grandma and my joint family. When i shifted away for school, I wasn't treated the best way, moreover ignored. I was broader line depressed, and my parents did try their best, but there's only so much they could do. Looks delicious! I love butternut squash soup and actually canned some butternut squash last year, so it’s easier and quicker to make this soup! You can actually grow butternut squash in a pot, if you have space on the ground for it to trail from the pot. I have done this on my patio, living in an apartment!

I love to add an apple (one large or two small) when I’m making butternut squash soup. If I have one I also add a sweet potato. They both make an interesting flavor profile. This soup looks great as is I just thought I’d add some of the things I do with mine.

Sounds nice, in the end it depends on the availability of ingedients - and personal preferences. So, no maple syrup and no nutmeg for my household. But pumpkin squash soup (or, together with other vegetables) a pumpkin-vegetables-cream soup is really great and tasty.

I think you really need to cut it before cooking it. However to soften it, maybe you could put it in the oven for half the cooking time, then pull it out and cut it, then put it back?
