🔶DANISH DOUGH
◾️1Kg Flour (With a minimum of 11.5% protein up to 14%)
◾️20g Salt (I use sea salt, but you can use fine salt)
◾️120g Sugar (Can be table, refined or muscovado sugar)
◾️50g Fresh yeast (Can be dry yeast from 16g to 18g)
◾️100g Butter
◾️30g milk powder
◾️10g invert sugar
◾️50g egg
◾️500g Water
◾️630g to 650g of butter for pasting (With a minimum of 80% butterfat, preferably 82% or more, and with a maximum humidity percentage of 16%)
