My father was a butcher in the 1930's. He met my mother in LA when he was a sailor. After the war she went to UK and married him a week after Elizabeth and Philip were married. He used to make sausage with lots of sage and added bread crumbs. I found the sausage is tender with the addition of bread crumbs. When mom made sausage rolls she used a short crust as it was my dad's favorite.
