Since the dates are usually irregular shape, I usually add 1 cup of water to the blender first, then pit and add the dates to the blender until the water gets up to the 2 cup mark. Simple!

You are always so adorable and genuine! I’m so happy you’re in my KZbin family. Your enthusiasm for plant based eating is such an encouragement to someone who lives in a world surrounded by people who think I’m nuts for eating this way. This recipe is a staple in our house too. I love that I don’t have to be addicted to sugar anymore, but I can still enjoy some sweetness when I want. Also, love the surprise at the end!! I was taught to cut up the dates and boil them in water - because high-speed blenders were not a thing in the kitchen when I was taught cooking. I use it in my "Christmas" cake which is a Rose Elliot "Everything-less Fruit Cake" - which though Rose Elliot's classic book is vegetarian is a vegan recipe I have cooked for over thirty years and it comes up trumps every time.

I've been buying my dates and dried figs from Costco. Do you know how sweet figs are? Well I didn't, I grew up in IN and I don't remember anyone having fig trees. Anyway, I put 1:1 ratio of figs and dates. That usually amounts to 8-10:8-10. I pour hot water over them and when I remember about them... I throw them in the Vitamix with the water I used. I add a little at a time. I don't want them runny, but I eat the Vitamix to run too. You know this makes a real good spread as well. I use this whenever I need to sweeten something up. I've put it in spaghetti sauce... You know... Whenever something calls for a sweetening agent. So good.

Awesome, we will have to try this out! Also, love your dogs and we can totally relate to trying to film with two crazy pups around. Last week we resorted to taking Oliver to doggie daycare on one of the days we filmed LOL. I love how the one on the left is like "let me down!" and the one on the right is chill. Ours have totally opposite personalities, but they are both lucky they are cute. :)

Off-Grid Homesteaders this is more of a paste however he calls it a syrup in the book. I like to think paste is homemade and syrup is more what you find in the stores

Medjools are generally larger than Deglet Noor dates. 2 sizes. Medjool seem to be more soft.

I'm guessing you are using to much water - I would add a little at a time to get the consistency you are looking for.

Be aware guys, boiling water can cause a blender canister to break and basically explode.
