Josh Weissman does a lot more full on cooking, baking stuff from scratch, and doing everything the long and natural way. He's got a good channel but his production is a lot lower than Sams (which is sams main draw). He's definitely one of the stronger youtube cooks, alongside Babish, and he has a strong breadth of cooking knowledge to teach you how to fully make things. Sam is basically a high tier cooking dad. He mostly mixes stuff from other stuff and takes intelligent shortcuts to make things that are a lot of fun and complex but by often putting together things he already has that you can easily buy. Arguably anything Sam does it is much much easier to do, definitely giving you ideas for your own dishes. Not to say he isn't a good cook. He just trusts the things he buys and doesnt really care to try to make his own mayo if he knows his japanese stuff is better. Both great channels. Also as I said, Sams production is probably the best as far as youtube cooking goes. Only really Binging with Babish even comes close and even then, the camera work is not nearly as fun. It also helps that Sam is insanely charismatic .

I work in a meat department at a safeway. the reason the ground meat turns brown or gray is because of oxidation. It turns like that as it gets exposed to air. It's still safe to eat as long as it doesn't smell or look slimy. However, it is much better to grind your own meat at home because you can take different steaks or roasts that you like to get a better flavor.

It's pretty amazing, but expensive. You can make your own if you buy a dehydrator, but you have to leave it to dehydrate unattended for a month. Incidentally, I think Joshua Weissman made a video about it. Give it a try at least once though. It's good enough to just snack on alone and amazing paired with anything. Tastes like balsamic vinegar and dried figs, and it has a moist texture but still crumbles in your mouth. If you wanna impress someone and you're willing to sell an organ, make some black garli aioli (egg, neutral flavored oil, and garlic in a blender) with truffle oil.

If ur making lots of bacon just put aluminium foil over a baking sheet and throw it in the oven for 20-25 but pre heat for 10-15 depending on ur ovens strength

the "balsamic-y" note in the mayo flavor was probably the chinese black vinegar, not the black garlic - balsamic vinegar is actually the recommended substitute for that ingredient if you don't have it

people who enjoy baking, which is really the only long process of his recipe. Making the bread doesnt have to be done on the same day and you can make it the evening before. Its also worth noting that the bread doesnt have to all be burger buns. You can use half as a burger buns and half in a loaf pan to make french toast. But for all intents and pruposes, the big difference make was the black garlic mayo, which you can make in 5 minutes

I always cut my burger/sandwich bound bacon in half. I also don't make everything from scratch unless it's a gathering, that's just time wasted when having a beer while managing the bbq .

On your comment about American cheese's melting potential: Adam Ragusea's video on mac and cheese with sodium citrate expanded my horizons on cheese meltiness. Just pick any cheeses you want, scoop out a little sodium citrate on top, and melt them, stirring. I'm usually lazy and do this in a measuring cup in the microwave. If you want a little less pull, like with American cheese, you can add a little whole milk, or if you don't care, just let the citrate salt and cheese do their thing. Then just dump the whole result out onto whatever you need melty cheese on. Flavor of any cheese with the melt of American cheese, heck yeah.

Black garlic was not something I would have used. But then Weissman taught me to use them for either a compound butter for steak, or something to use in the spiced mayonnaise he uses for fried chicken burgers. Didn't look back every since.

I assume you watched the other guys' videos before making your own, but I'm not sure. I think you just read Sam's ingredient list because you were clueless on Sam's use of a beef blend. Sam tried to stay in the same ballpark as Wendy's but making some small improvements. One of those is the beef. He didn't want it all to be regular ground chuck, so he did half short rib. This comparison video isn't balanced. Josh really goes way beyond and does little to stay near the original product. Two different approaches. It shouldn't be a versus, but instead something like Tasty - 30 minute burger and 2 hour burger. I love how you describe the two burgers, their differences and factor in effort to create both.

Roux is butter and flour that is then cooked. Tangzhong is flour and water brought to a boil. The burgers do look good!

Wondering if you could do a best of both worlds thing and spread Josh's black garlic mayo on a store bought bun, grind the meal ala Josh, add American cheese. I'd also add some veggies for crunch, myself - some good lettuce, summer fresh tomatoes, some crisp red onions and perhaps a good pickle, too.

Please try Josh's buns on their own, when you have time. You don't have to film or anything, but they're amazing buy themselves. Also maybe look into his japanese milk bread if you like, his hamburger buns are inspired by the milk bun recipe. It's soo good ahhhh
