Excellent series of videos! Love to hear Matteo’s thoughts on the different taste profiles of the different brew devices and methods. For example, the conventional wisdom is that conicals bring out more acidity and clarity than flat bottoms, immersion mutes acidity, etc. As always, thanks very much for these awesome videos.

It's been really fun to follow you brewing different coffees and learning what you focus on to make a great cup. Any specific reason you use commandante grinder for all coffees? See a lot of people on internet prefering grinders with less fines like ZP6, Pietro, etc but see a several expert brewers use the C40.

Thanks so much for the comment and the support. I use the Comandante because still my favourite overall. I decided to use it in all the videos because if I change also grinder apart from coffee and drippers, than there were so many different variables. regarding the fines, every grinder produce fines at the end. that doesn't depends only from the grinder but also from the coffee, some coffee are more brittle and some less. It's important to have a good grinder that produce a good particle size distribution.

I didn't know you could combine the parts of different Hario brewers like that. Is the main advantage not having to preheat the Hario Switch's glass top since we're doing full immersion?

Yeah that is something Hario is working as well. The fact to be able to fit different brewers in side the Switch base. They are planning to start to sell only the bases soon in different colours. Definitely having plastic is an advantage in immersion. not only for the pre-heating but also for the heat retention.

I hate the Mugen design when placing the filter paper; it does not sit flush unlike when I use the original part of the Switch
