Overnight Oats:
½ cup rolled oats
½ cup milk (dairy or dairy-free)
¼ cup Greek yogurt (dairy or dairy-free)
1 tablespoon chia seeds
1 tablespoon maple syrup
Mix all together and refrigerate over night.
Top with diced orange, 1 tablespoon of roughly chopped pistachios, 1 TB of pure maple syrup, ( I did not add this, it was sweet enough) 1 pinch of cinnamon.
Chicken breast tarragon cream sauce
2 tablespoons of EVOO
4 boneless skinless chicken breasts
1 tsp. of kosher salt
1/2 tsp. of freshly ground black pepper
3 TB. Finely chopped shallot
4 garlic cloves, minced
3/4 cup of low sodium chicken broth
1/2 cup plain Greek yogurt
1 TB. Dijon mustard
1 TB. Roughly chopped, fresh tarragon, I used dried
Zest and juice of a half of a lemon
1 tsp of arrow root powder
2 tsp water
Heat oil & Season both sides of the chicken breast with salt and pepper then place in the skillet. Cook for 5 to 7 minutes on each side till lightly golden. Remove chicken to a plate. Reduce the heat to medium low add the shallots and garlic and sauté for one minute. Add the broth & yogurt and whisk. Add mustard, tarragon, lemon zest, and lemon juice and stir until the sauce is smooth. In a small bowl stir together the arrowroot powder in water to create a slurry. Add to the pan and immediately whisk together. Return the chicken back to the skillet. Pour some sauce on top and simmer until the chicken is warmed through.
Slow cooker, maple mustard, pulled pork
1 TB dried oregano
1 TB whole grain mustard mustard
Salt and pepper
4 1/2 lbs pork butt or shoulder
1 med. yellow onion
4 garlic cloves, minced
Mix to get oregano, mustard, salt, and pepper, and rub on the pork. Place the minced onion, and garlic around it.
Sauce:
1/2 cup pure maple syrup
1/2 cup of whole grain mustard
1/2 tsp. Dired oregano
Salt & Pepper
Rub half a sauce onto the pork, cover and cook on low for 8 to 10 hours or high 5 to 6 hours until meat is fall-apart tender. Take meat out with a slotted spoon and shred then pour the rest of the remaining sauce over the meat and stir it together.
Chocolate Cupcakes -
Chocolate Banana Muffins:
⁃ 3 ripe bananas ( or you can sub 3/4 cup of applesauce)
⁃2 large eggs
⁃2cups almond flour
⁃1/2cup cacao powder
⁃1/2tsp baking powder
⁃1tsp baking soda
⁃1/4cup coconut sugar
⁃Pinch of salt
⁃1/2 cup dark chocolate chips
Mix dry, mash bananas and then add eggs to combine. Add wet into dry, stir in chocolate chips.

Great vlog Karen. I know you get to Pittsburgh often and if you have a chance, you can actually take a glassblowing class at the Pittsburgh Glass Center. You of course do it under supervision but it is so much fun.

Now retired from our local high school after having worked for 25 years as a study hall monitor!! Boy could I tell you some stories ~ Haha!!! My husband is retired as well which we love!! Two daughters, one is married, a preschool teacher and lives in Northfield Center. Our youngest daughter lives in Hilliard and work at Ohio State in their College of Nursing. Arrow root is a starch/flour it is grain free and gluten-free, but I'm sure you can use regular flour just to thicken a sauce!

Happy to hear you are safe from the train disaster. When you drive through, make sure to keep your vents closed and windows up to limit inhalation . Also I just want to comment. I use to love your cozy decor , as Laurens was to modern and glitzi for me. Now I notice , especially in the blue blouse section... your home has become so modern and white. I miss the cozy factor. But its your home. At least in the kitchen you kept the wood cabinets and stone pillar, which I find add so much color and charm. This all white just doesn't seem to be you. But then, I only know you in a video, not in person.

The candle is expensive and has very bad reviews. I find comparable tobacco candles at marshals and TJ Maxx. The thinking statue is cute. I have a bird made of glass that I purchased in Caracas Venezuela, many years ago, at a glass making facility. So interesting.
