I am obsessed with how you trace your letters on fondant!! It is a game changer! All the fonts/options are endless. I normally just buy fondant for small details but I really want to try your tracing method so I am making marshmallow fondant!! The more shortening you use, the more stable it will be. I tend to stick with a total of 1 1/2 - 1 3/4 cup of butter and shortening combined. (In the Winter, I do 1 1/4 cup butter with 1/2 cup shortening. In the Summer, I do 1 1/4 cup butter with 3/4 cup shortening.) I know it's hotter down there, so I would say you can do a 50/50 ratio of butter and shortening to start, or even reverse it... 1/2 cup butter with 1 1/4 cup shortening.

I usually decorate cakes the day before and place them in the fridge until delivery or pick-up. Would the lace dissolve or become soggy/ droop once the cake starts coming to room temperature due to condensation?

I have a question about fondant. When I use buttercream underneath my fondant cakes my buttercream gets soft underneath and it causes my fondant to droop and be really soft. It’s not clean and sharp. It’s like the fondant makes my buttercream soft and it’s not able to crust over. What would you do?

Apply your fondant on a chilled, crusted cake. You can also use ganache instead of buttercream.

Exactly what Michelle said! I only cover buttercream cakes right out of the fridge. So the icing is solid and it doesn't get messed up.

When I do a gold drip, I use yellow candy melts and paint it gold with a small paintbrush and Rolkem Super Gold mixed with lemon extract. It's tedious! I will film it the next time I do it. 😊

how long can you keep the ruffles after making them individual, i have made them with buttercream and a fondant mold but since time this way is time if i make them in advance how long can they last if i store the in a locked sealed container in platic wrap

I have made them 2 days in advance before. They may be able to last longer. However, you don't want to risk them drying out too much because they can get fragile and easily break. If I were to wrap them up, I would also put them in a plastic ziplock bag and then store in an airtight container. You want them to be hard enough to hold the shape, but not too hard that they will break when you handle them. I hope that helps!
