Mommy and Deddy , you can use Ribena berries 🍒 or Beet root to achieve the red color. First, blend the beetroot and boil it with the sorrel. Also you can boil the Ribena berries with the sorrel and blend them together to bake your cakes. I tried both of them and it worked. Try it and see if it works for you. I do a lot of experiments in the kitchen with foods and this is how I found out about the Ribena and beetroot. Blessings and respect to the family.

The eye Mommy and Deddy was referring to on the egg is called the Chalazae. It's there to keep the egg yolk from busting before we humans crack it open. I just thought I would pass that info over to you all. Thanks for bigging up the culture of Jamaica with these wonderful culinary treats. Love it. Lots of work goes into baking something so beautiful. Mommy got skills! Just saying. I'm originlly from JA. I don't remember tasting Sorrel Cake. That's escaped me somehow. Maybe I did.

However, when im baking i boil the sorrel with some sugar to cut the sour taste, then I blend the sorrel and fruits together, then I add some strawberry food colouring to give it that red colour.

I could not get enough sorrel and other Jamaican fruit specialties. Bombay mangoes and Julia mangoes are both straight from the greater world. Sorrel cake reminded me of English Christmas Pudding. Loved it all!

It also depends on the si,e of the eggs. If they're large egges you fo use less eggs. About 8 eggs to 1 pound . And i also use lime skin all the time to my cakes. You really know your stuff❤🙏😇 God's blessings to you'll. You can use a little colouring to it or red food dye❤

I bake the soril cake too I have to put a little red food colouring to give me the red colour that I need. If you used the green soril then you would get that colour. Looking nice

I've never made sorrel cake before, but it looks delicious! May I suggest that you blend some boiled sorrel in the fruits and add it to the batter or just add red food coloring.
