Undoubtedly the best mince pies. Forget Christmas I could eat them every day. The pastry is delectable. Yum!

Hello Geoff nice to see the good old English classic mince pie reminds me of my childhood and the anticipation of going to visit different members of the family who would open up a large tin brimming with fruity smelling pies dusted in caster sugar . absolute bliss a real herald of the coming Christmas time and even more exciting if you got a blob of brandy butter on the side of the plate!!! I am so glad I found this one as well! and so pleased that you have so generously given directions on how to make the mince filling as here in California it will be a bit of a challenge to find store bought mince filling. Question on the spice will that be like cloves and nutmeg and mace and cinnamon ? also might be hard for me to find mixed peel so I may have to make my own would that be a mix of candied citrus peel chopped up? I think I will be able to make do. I do love a mince tart or pie now and again and we do not have them in our bakery shops here. it's a shame... so thank you again... so tomorrow I will binge watch more of your wonderful contributions...

Hi Julie-Joy. I hope you enjoy the mince pies when you make them. As for the mincemeat I used mixed spice that is ready made. The ingredients, as listed are cinnamon, coriander seed, nutmeg, clove, pimento(all spice)and ginger. Usually in the UK the order in which ingredients are listed in order of the % of each ingredient. So the largest amount would be cinnamon. All the spices are ground, of course. If you want to make up a batch of mixed spice, which can be used in things like fruit cake, Christmas cake, Tea loaves etc, you could try this list of ingredients : 1 tablespoon quality ground cinnamon 2 teaspoons ground allspice(pimento) 2 teaspoons ground nutmeg 1/2 teaspoon ground cloves 1 teaspoon ground ginger 1 teaspoons ground coriander 3/4 teaspoon ground mace (this is the outer husk of nutmeg. if you don't have it add a little extra nutmeg). As I mentioned in the blog entry, you can use butter instead of suet if you can't find that.

You inspired me with vanilla in the pastry. I also have to use my muffin tin, as I don't have a smaller pan at the moment. I would like to see what the family thinks of my mincemeat before I make such an investment. I am wondering if paper liners would help or hurt. Hmmm. You got me thinking, but the mince needs to marry a bit longer before I go at it. Thanks for the video. I will also try to press the dough into the cups or holes, what shall I call them? Hi Sandra Kaye Hansen. A muffin tin will be good for these. You can fill them part way up the side with pastry, or all the way. That way you can have a smaller pie or a deep filled mince pie. I tend to call the holes cups. I wouldn't use paper cases as I don't think the pastry needs it, The pastry should not stick in a non-stick pan. I do hope you enjoy your mincemeat and the pies. I've never seen pastry made lìke that before, my pastry attempts usually end up lìke concrete! 😅 My hubby looked worried this week when I bought a jar of mincemeat BUT.....I will give your recipe a go! If not, it's back to Tesco finest, lol.

Hi Yvonne, these are very easy really. I hope they turn out well for you. Please let me know. Just one extra tip that will help. When preheating the oven place a baking tray on the shelf so that it gets hot. Then place the aluminium cups, or the muffin tray on that hot tray. That will kick-start the baking of the bottom on the pies so you don't get a bit of a soggy bottom.
