The holidays are here... Steve is making mincemeat and Gabby decorated everything this past weekend. Looks amazing. I wish I had one for breakfast. One question ...Should mincemeat be stored refrigerated or is it stable at room temperature?
@Steve-Owens
@Steve-Owens 6 жыл бұрын
Good Question Anne, one I often neglect to clarify.. I have stored mincemeat at room temperature for over a year, I prefer to move it to the refrigerator after I open it. It is of Course important to sterilise the jar as you would any preserve. Baking at these temperatures over a long period, pasteurises the contents. Subsequently, it keeps like many Preserves. Think of it like a Jam/Jelly and store it as such.. Love to you and Gabby Anne XX

@@Steve-Owens Hi Steve. Following on from your response to Anne's question, presumably it's fine to make mincemeat now (beginning of January) and keep it until Christmas? I imagine the flavours will develop and 'mature' throughout the coming year? A very happy New Year to 'you and yours'. Peter A :) :) :)

Wow I made some and it is delicious. The hardest part was trying not to eat the ingredients (except the suet) before I got them all into the mixing bowl. The next hardest part was not eating all the mince before I got it into the mason jars. I failed partially and did eat quite a bit of the fruit and the mince. The final challenge was not to drink too much of the brandy I added, I have the self control of a sponge, but who cares I really enjoyed making the mince., and the brandy was my reward for my efforts.

Hi, I've put my Christmas mince meat, in my slow cooker. 1st time ive ever made it, to put into a container. And im saving money that way, aswell. Its on slow and low, been on for 2 hours. Going to let it cook for a little bit longer, and see what it's like. 1st time ever making a batch of it. If it, goes wrong, it goes wrong!!! You never stop learning!!😊

Today i made my first batch of homemade mincemeat using your recipe. I used a one pound tub of bought candied peel with the cherries in it, and added half a pound each of diced dried apricots and golden raisins. Then the granny smiths, the lemon and orange. It smells wonderful. It went into the fridge, and i shall make the shortcrust and enjoy some pies soon.

I've never made mincemeat before as I've always just used (what I've thought) was a good quality shelf one, but I'm going to try your recipe this week in time for Christmas this year. Just one question - I know you poured the mincemeat in the jars while the mixture was hot, but were the jars also hot? I tend to sterilise my jars in the oven when I'm making jam etc and the mixture goes into the hot jars, is this the case with your mincemeat?

I found a trick for near zero alky wine. Take your fruit (s) of choice or frozen juice. Add sugar to make it sweet. Place open wide bowl or glass cooking dish (meatloaf dishes work great) in your hot water heater room on top of heater to sit for 12-24 hours. It will sour and bloom. After 6 hrs, check flavor and adjust sugar as you like. Very seat of the pants but very effective. Alcohol content will usually be less than 1percent. 85-95 F is idea, 100 is the maximum. @Steve-Owens

In truth you only need to have Raisins or sultanas. Maybe some dried apricots or cranberries, it's really not a huge variety needed. I think what you are seeing is more a trail mix and that's not ideal.... If it's predominantly fruit it'll be fine.. adding nuts is fine. Almonds are preferred.
