Bacon, Egg and Cheese Puff Pastry
If you have puff pastry on hand, this is a super easy recipe, similar to “Hot Pockets”.
We used bacon, egg and cheese, although the ingredient possibilities are endless.
Recipe:
Ingredients:
1 each- puff pastry sheet
4 each- whole eggs, scrambled
8 each- bacon slices, cut in half
cheese, of your choosing to stuff each pastry.
1 tbsp- butter
2 TBSP- milk or cream
1 each- egg for egg wash
salt
pepper
flour for dusting
Method:
Dust surface with flour and lay ou the puff pastry to thaw.
Thaw pastry for around 30 minutes.
Cook bacon to desired crispiness, set aside.
Crack eggs, add milk and salt and whisk.
Melt the butter in a saute pan over med heat and scramble the eggs.
Once the pastry has thawed, unfold and stretch slightly with a rolling pin.
Cut the pastry into even quarters.
Place cheese on the pastry leaving room to fold, top with eggs and 2 pieces of bacon.
Using your finger, wet the end of the pastry to seal after folding.
Fold the pastry and seal with the wet half.
Egg wash the tops of each pastry and top with salt and pepper.
You can also top with sesame seeds, fresh herbs or whatever you like.
Cut 2 slits in each pastry to allow steam to remove when baking.
Bake the pastries at 375F for about 30 minutes, until the dough is crispy and slightly browned.
Remove from the oven and cool.
