Egg Foo Young-Pork and Veggie
This is a fantastic recipe for egg foo young, we used fresh ground pork and fresh veggies.
Although most egg foo young recipes use bean sprouts, it is hard to find those currently with the health risk.
We have opted for broccoli slaw which is a great alternative and actually we prefer it.
Recipe: Makes about 6-8 patties
8 oz- Ground pork (optional)
1/2 cup- chopped scallions
1/2 cup- diced mushrooms
1/2 cup- diced white onions
1/2 cup- chopped asparagus
1/2 cup- broccoli slaw
10 each- whole eggs, beaten
1 TBSP- chopped garlic
2 TBSP- soy sauce
as needed- salt
as needed- Pepper
2 TBSP- sesame oil
For the sauce
Recipe:
2 TBSP- sesame oil
2 cup- chicken stock
1/4 cup- soy sauce
1 TBSP- white sugar
1/2 cup- corn starch slurry- equal parts corn starch and water.
Method:
Saute ground pork, use a fork to chop into smaller pieces, cook until slightly crispy. Set aside.
Heat a pan over med heat, add sesame oil, onions, mushrooms, garlic, asparagus and broccoli slaw. Saute until tender.
Add soy sauce, salt and pepper.
Remove the mixture and cool.
Add beaten eggs and scallions and mix together until combined.
Refrigerate for 30 minutes.
Add canola or vegetable oil to a large saute pan.
Ladle egg mixture into the hot oil, distribute as needed.
Fry until golden on each side.
Remove and place on a screen to drain while you cook the next batch.
To make the sauce:
Add sesame oil, chicken broth, soy sauce and sugar, bring to a boil.
Add corn starch slurry to thicken to desired consistency.
To plate the dish:
Place egg foo young on a plate and top with sauce.
Grnish as desired.
