Hi great video. i have 5 questions though, How do you make the compound butter? What kind of snail do you use? Can you add tabs describing what you are doing with the heat knobs throughout the video? What kind of bread is that? And what type of wine are you cooking with?

To make the butter: Just get some salted butter and soften it with a spoon, add in chopped garlic and chopped parsley. Mix it into the butter and then roll out, cover with baking paper and put it back in the fridge. Easiest is to take some clingfilm and wrap the butter in it and roll the ends .

Hello. Sorry for the late response. A compound butter is an aromatic butter. Some butter in which you add some flavor and condiments. I have a video on how to make a compound butter on the channel. The snails were not fresh but canned. The oven as at 450F. Thank you for watching!

I had to try this when I went t to the Cruise boat and I thought that was terrible but I ate it on accident and thought it was good also thought it was a cook mushroom but they said it was snail I felt a bit sick then

1. Do we cook the canned snails the same way?? 2. Sometimes I find the canned snails to be rubbery when cooked? Why is that? 3. How should the snails be in texture after cooked??

DJ Keith D Hi. The snails should feel a little rubbery but not to much. Depending of how you cook them and the brand you are using, result might be a bit different. Some chef will use the snails directly out of the can and some will cook them a little bit to reinforce their flavor. The longer you cook them the rubberier they will become. With snail, alligator, conch or frog legs what is very important is the sauce you serve with them since they do not have much flavor on their own. I hope that help.

You mean you use canned snails? Yes you can and for a novice it is advicible. But you are a chef!! Catch your own. Fast them for 4=6 days. .Clean in salted water. Cnange water 3-4 times. Boil in lightly salted water. .not too much salt -it will make the snails tough. Do garlic butter. Stuff. Very hot oven..
