Delicious Leftover Ham and Orzo Casserole ❤️

This leftover Ham and Orzo casserole is a delicious way of using leftover holiday ham, but it can also be prepared anytime of the year. I love the texture of the Orzo pasta because it’s a nice change from the usual rice and bigger pastas. You can replace the ham or other ingredients if you wish too, this dish is easy and quick and super delicious. This can be made into a one pot dish, but I like to cook my Orzo first then rinse it because it’s lighter and less mushy, and I don’t like mushy. You can serve it alone or with a nice salad and your favorite crusty bread. I hope you give it a try. ❤️

INGREDIENTS---------
350° 25-30 minutes
1 1/2 C. diced ham
8 oz. uncooked ORZO (1 cup)
1/4 C. Chopped yellow onion
1/4 C. Chopped green onions
1 C. Chopped Celery
2 1/2 Tbsp Olive Oil
1 1/2 Tbsp All Purpose Flour
2 C. Can Diced tomatoes (drained)🍅
1/2 C. Chicken broth
1/2 tsp dried oregano
1/4 tsp onion powder
1/4 tsp garlic powder
2 or 3oz. sliced black Olives (drained) or more if you like
2 1/2 C. Freshly grated Monterey Jack cheese
Salt to your liking
Pepper to your liking
Cayenne pepper (optional)

Orzo is one of my top five pasta shapes. Oftentimes I dry toast it in a skillet then use it to make a pseudo risotto which takes only about 15 minutes to cook.

Yum, Yum & Yum!!!!! This looks so scrumptious, and the use of orzo is perfect my sweet Rachel. You never know what to use it in and we do love orzo, so this is a perfect recipe. So glad you've posted it, as this will be what I'll be making for Sunday dinner next Sunday. I just have to take out the ingredients before adding the ham. Ms Rachel, you never cease to amaze me. I am not a huge ham person myself, but my family loves it and can’t seem to get enough, but as usual, there’s always some left over. Recipes are sometimes hard to find, and those you do find, normally call for potatoes. This is a different spin with the orzo and tomatoes. I’m for sure going to try this after our large Christmas dinner. BTW…Another “Apron Luv” going on! Gonna have to find a pattern so I can make my own!
