First off, hi to Mom! Love the remoulade idea with the artichoke hearts (1000 Island my ass🤣🤣) I've done similar with pistachios, and that works well. But that final breaded pile just prior to frying looked like perfection! I love the crispy skin as well, so this is the perfect method for me. As always, great job gents!

Please, please, can someone explain ....why the oven? Trout is a slim bodied fishbwith those size fillets. Don't they cook completely during the pan fry? I have pan fried A LOT of fish and skipped the oven step...didn’t even know it was a thing. Have I been doing a BIG OOOOPSIE!!!?!?!?!!😊
