The problem everyone's mentioning is how he says "a tablespoon" and in reality, clearly does more than that. Some pro cooks do that sometimes in their video... it's better if they don't say "3 tablespoons of (something)" if they really mean some vague amount between 1-6 tablespoons, for example.

When you cook long enough you know certain thing are just a guide, like when he says only a tablespoon: none of us pays any attention to that, but someone new to cooking needs that instruction so they don't drown it in oil. There's going to be plenty of oil from the sausage, but to stat you just need enough so you're not burning anything before the sausage goes in.

@@butler-macdonald8351 Any restaurant owner can wind up having to close a restaurant and he has to do what's best for his operations. You don't keep the star if it closes. Having had 16 stars is pretty impressive, and while you might not like him I doubt he or his $220,000,000 are really affected by that it any way.

@@zaganim3813 Right, it's just a guideline. It still makes most of us laugh when we hear him say "Tablespoon of oil" then see him free-pour like a quarter cup of oil. lol. Either would probably be fine, to be honest. You need SOME oil, and a tablespoon would probably be okay, but a little more would be better. It kind of depends on the temps and what you're cooking, too. Meat with fat won't need as much. Something like say onions, that don't have all that much to them will burn quickly on a high temp and not a lot of oil.

For those looking to actually make this, I am a student and parents always cooked me meals, I made this last night and let me tell you, it is a very simple dish to make and tasted absolutely amazing, what I did differently was I boiled the rice separately until it was cooked to my preference, once I finished making the sausage dish I added some of the cooked rice, mixed it together and it was beyond amazing!!!! Appreciate the likes and comments! EDIT: so saw a few comments about "whats the difference with cooking the rice separately"! might be easy for some people but for someone new to cooking like myself, its super hard to tell how much rice to add , it's very easy to overcook the rice or not putting enough rice. Yeah you might not get as much flavour as cooking the rice in the dish which allows the rice to absorb more flavour but the dish alone already has so much flavour doesn't bother me that the rice doesn't absorb it during the cooking process! *also side note, I did not use wine, just chicken stock!*

Whats the difference boiling the rice in a seperate pot or in that which is already in use ? There is enough liquid in the pan for the rice to cook and additionally it already absorbes the flavor into it

My wife who is in injured, TBI. Started to challenge my cooking skills. Today she pulled out sausage and asked for a rice sausage dinner. I actually had the same idea as this. But not the white wine. 😂. I do have all the ingredients. Thank you. Makes it easier.
I make this regularly. I change up the order though and fry up the sausage meat first, setting it aside when done. Making sure it's browned nicely. This way it won't suck heat out of the pan later and you actually have the sausage fat in the pan when you cook the onions. And you can get a lot more browning happening this way. To each their own.

ICYI, here is the written recipe: Ramsay Sausage and Rice - A tablespoon oil - 1 red onion, chopped - 1 Red bell pepper, roughly chopped - 3 garlic cloves, thinly sliced - 6 Sausages, casing removed (My family isn't big on spicy food, so I use sweet Italian sausages. The fennel in the sausage adds an amazing flavour to this dish. Any sausage works though) - 1 heaped teaspoon paprika - 2 Cups long grain uncooked rice (I use basmati) - *1/2 Cup white wine (I use chicken stock instead of wine) - *4 Cups chicken stock (4.5 if not using wine) - 5 green onions, chopped - 2 Tomatoes, chopped - Small bunch of flat leaf parsley, chopped Add oil to pot and sautee onions for 5- 6 minutes. Add bell pepper and sautee 2 minutes. Push peppers and onions to the outside of the pan, turn heat up to high and add sausage meat. Once meat starts to brown, add garlic and paprika, stir well. Add rice, stir well, then add 1/2 cup of wine* and use wooden spoon to scrape the bottom of the pan, loosening off anything stuck to the bottom. Once the pan feels clean, pour in the stock, reduce heat and simmer for about 20 minutes until rice is cooked. Once it's done, remove from heat and stir in green onions, chopped parsley and tomatoes, Enjoy! *If the liquid is gets really low before the rice is fully cooked, put a lid on and turn off the heat. The rice will finish cooking within 5-10 min.

I have made this 1 time before and I will be making it for dinner tonight. It came out amazing. Super good! The next day I ate the left-overs for lunch and all the hot n spicy came out in FULL force. It was a big mistake to add hot sauce. This is a fast and easy dinner to make. This one is a keeper!

I wasn’t expecting much from this dish because I’m more into Indian, Thai and Mexican but it was Superb. I used chorizo and bratwurst because I could not find Italian sausage. I wouldn’t make it any other way now. Spot on. And added to my household menu. Thanks Gordon. Great recipe

I followed this recipe to its bare bone, using a couple of spicy lamb sausage. The flavor is indeed amazing, but notice that he never put salt or pepper in. When I tried it, the flavor was a little too light. When you make it, you might wanna season the dish, or add soy sauce at the end, according to your liking. Have a good day!

The fact that i love him the most is that i have a huge novel called 'GORDON RAMSAY BIOGRAPHY' and i have read it. When i was reading that i actually felt every single moment of his life and there was struggle, love, pain, success, failure and everything else. I have that condition where I just can't get enough of the olive oil. I made this tonight, used a bit more than a table spoon and it was amazing. Shared it with a couple of friends. I didn't use any additional spices than what was already in the ingredients. So no added salt, pepper, etc.. I think that adds to the brightness of color and flavor. Yes, I know Chef Ramsey used paprika. I didn't have any and it was still amazing. I'll contribute that to the extra olive oil!!..lol.

I used caramelised red onion sausages and herby cumberland ones instead of spicy ones though and brown rice which takes a little longer to cook but it was absolutely magic. Thanks Mr Ramsay... you managed to find something made mostly of veg that i can get my 6 year old to eat. (I normally have to hide them) There are no words!

This recipe turned out very good. Not so much "gourmet", but just solid comfort food you'd want a loved one to serve you. He didn't mention salt & pepper, but it definitely needs a bit of both.

Spicy Sausage, Red Onion, Tbs Olive oil, onions in first 5-6min, red pepper mid chopped, in, garlic, in, high heat, open center, stir in sausages quickly, tsp paprika, raw rice, 30 sec mix in, white wine deglaze, chicken stock, double to rice, up to boil, turn down to simmer 12-15min, tomatoes & spring onion in, no heat, flat leaf parsley, serve.

You probably want to throw in salt with the onions and the peppers. It helps them cook down while flavoring the dish. I forget why.

Made it today. It was really good! I've used canned tomatoes that were already seasoned for vegan Bolognese. And I've added some carrots. Next time I'll use chorizo and bacon :)

1) Pour olive oil 2) Let it heat till it is about to start fuming a little 3) 3-4 pinch of salt evenly 4) let the onions caramelize 5) this will be the good point to introduce all the spices 6) keep roasting all spices with onions for the next 6-7 minutes, until the spices becomes brown 7) if the spices start to stick at bottom or starts to brown a little, just add 2 teaspoons of water, the spices will start to release oils and you can see that the whole mixture will become non sticky 8) this is the perfect point to add vegetables, capsicum cooks really quickly and once it is cooked it becomes mushy, so add these just before deglazing, once capsicum is added keep it on heat for another 2-3 minutes until it is half cooked and there is very little change in texture 9) deglaze and let it heat for another 3-4 minutes 10) add rice and heat time for another 3-4 minutes 11) add water and let it boil until the rice is cooked, cook it with a lid on if the water is too little, keep the lid off if you poured more water by mistake.

Just made this tonight. Couldn’t get hold of an Italian sausage without going to the local butcher which I didn’t have time for so was done with chorizo, and was absolutely delicious. Will definitely make again.

Le Di Chang i made this tonight and it seemed to me like it needed some help from somewhere. At the back of my mind I thought just some cajun seasoning would do it... buttttt the game changer here are the spring onions and the parsley. They really make it sing and I feel like that would be lost with too much other stuff... That being said it seems a bit lame relying on the last minute green stuff. Maybe my ingredients just weren't expensive enough!

Not really.... Jambalaya you would do Merguez or Chorizo for more heat and swap Cayenne pepper for the Paprika. Jambalaya should be SPICY. This recipe would have flavor but not much heat.
