이거 해먹었는데 진짜 너무 맛있어요. 달콤상큼한게 진짜 물리지 않고 쭉쭉 들어가구요. 더 대박인건 만든 당일날도 맛있지만 남은거 냉장고에 넣고 담날 차갑게 먹었더니 윤기가 좔좔흐르는 닭강정마냥 바삭하고 고소하고 진짜 너무 맛있게 다먹었어요. 이분 레시피로 한번도 실패한적 없네요

We made this for our friend and neighbor. We bring her dinner every Saturday. Out of the meals we’ve made her this one truly delighted her. She loved it so much. The double frying is a technique called velveting. You heat the oil to ~325°F and fry for 90 sec. Remove from the oil, drain and rest. Then heat the oil to ~350°F, then fry again for ~45 sec. The first session is lower temperature to allow the chicken to cook slowly but evenly. It will continue to cook as it rests ensuring no salmonella poisoning. The bigger your pieces, the more important it is to do this step long enough. The second session is higher temperature to get a nice golden brown color on the chicken quickly. This technique is very common in Chinese cooking. I do it with General's Tso's, Bourbon Chicken, Kung pao, Sweet & Sour... you name it.

Correction: Velveting is marinating the meat with cornstarch or egg white. Don’t mistake it with double frying. They are completely different cooking techniques.

Former Panda Express employee here, this actually seems a lot better than our chicken and it’s a lot healthier too. At panda we start with a base sauce (to us cooks it was just a mystery sauce used for every sauce) and use literal buckets of sugar and vinegar for one batch.

@@jen-lnicole2043 we put a lil sesame oil on a hot pan and cook red chili flakes and garlic on it then add our orange sauce and after the orange sauce is bubbling for a while we add the chicken we fried in the process but our sauce way worse for u haha they got a base teriyaki sauce that’s sweet already then add tons of sugar more and some other stuff I forgot but it’s a lot in like a 5 gallon container

Bro I made this today - the whole family LOVED it. They call me a professional cook now. My dad seemed proud of me during dinner - Ahhh thats makes me soo happy :) I do have a suggestion however - cut down the brown sugar by half or one-third because its very sweet! PLEASE remebr to defreeze your chicken in the fridge overnight - trust me it will save a lot of time!

An air fryer (which is really a countertop convection oven) is a great appliance, and you'll love it - but you need to understand that it's absolutely not a fryer by any stretch of the imagination. It will do frozen fried foods wonderfully, mostly because they're already fried the first time (similar to the first part of the two-stage frying process in this recipe), so they've already got the fat in place and just need that high-heat crisping phase, which doesn't _really_ need a fryer to accomplish (it just goes faster in a fryer if you already have one handy and heated up, as you would in a restaurant, and if you did the first frying at a low temp at home, heating the oil up a bit for the second frying doesn't take long). And there are a lot of things you can do with "fake" frying by adding a bit of oil to the outside - English-style "roasties" are at least as good as any large-cut deep-fried potato, with a crisp exterior and fluffy interior. But trying a wet batter is futile. You'll be baking, not frying. Your coating will be a cake, not a fried batter. There's nothing wrong with cake, and an "air fryer" is a great way to make a small cake. But when you put on the orange sauce, what you'll have is a soggy cake, not a coated crispy battered piece of chicken. Like I said, "air fryers" are great, and you'll love it if you have one, but you have to understand what they are, and what they can and can't do. (Oh, and they use a whole lot less electricity than turning on the oven to do the same job, and if your oven isn't a convection oven, there are a whole lot of things it can do better.)

Made this tonight for dinner. Big hit! Great recipe and instructions! I didn't have rice flour so thanks for the substitute instructions. Still turned out yummy!💕👏🏻

Just made this. Tasted amazing. I doubled the recipe; didn't use as much honey (maybe 1/2 tsp cause it's all I had). I also substituted the rice flour with the recommendation and it was still super crunchy.
