Because there's no good reason to switch to celsius or kelvin for anything outside of calculations, and given the increasing levels of automation in the calculations, that reason to use scales which are less relatable to humans is of increasingly diminished importance. Better question is why use a scale that is inferior for the comprehension of the users, which also is tied to hilariously arbitrary units like bar?
