marine tech here. the cooling system is probably clogged by the fins that were missing from the impeller when you removed it from the water pump. if the fins weren’t inside the water pump itself they had to go somewhere down the line causing blockage & overheating.

The first heat exchanger in line. Follow the cooling houses to the cool fuel system. Normally on the port side of engine block. Could be the power steering heat exchanger as well. Depends on the year and hose routing. Hope this helps

Back flush the cooling system with a garden hose from the thermostat housing to the raw water pump outlet hose after fishing out all the pieces of impeller. I recommend doing it in sections to make sure you get it all out. It collects in the heat exchangers. One for fuel and one for the power steering.

You should never run the engine with the drive in the "tilt" range always keep it trimmed down as close to parallel with the keel of the boat. It can wear/ bind/ explode your u-joints and the yoke in your engine drive shaft! While destroying you drive bell house. Which cost more than you paid for the boat😅😂
