I think on the contrary there are a lot of bosses like this in Dark Souls, maybe it's a bit more cryptic though. The whole Sif/Artorias backstory is kinda sad (too bad they removed Artorias' dialogue). You have Vendrick in DS2 (but don't remember that much if there are other). And of course in DS3 Lothric, you can also think of the Old Demon King that when near dead seems desperate and weakened... but I have to admit Astraea and Garl Vinland have the saddest backstory!!

Jesus Cardenas Coming from Demon's, when I first played Dark Souls I wasn't too fond of it. Everything felt sluggish and I didn't like how they reskinned Demon's Souls bosses. And the bosses' themes weren't that good in my opinion (save for a few exceptions). However after playing it a lot I can say I love it as much as the rest of the Souls (except DkS2, that one was really disappointing).

Sage Freke tells you that the "God" worshipped by Saint Urbain and his followers (and presumably by Astrea in the past) is actually a romanticized depiction of the "Old One." The Talisman of Beasts also backs this description up. Basically, Astrea realized that she was worshipping the Old One. Think about the shock that must have caused. It's like being a Christian and realizing that God and Jesus don't exist and you've been worshipping Satan the whole time. Think about how abandoned they must have felt. She then took a powerful demon's soul to help out the defiled of the world. Basically, even after finding out her religion and life were a dark lie, she gave in and accepted dark power, but only to aid those who were cast out by the world. Note that it does not say she is aligned with the Old One, merely that she accepted a demon soul. Now think about the overarching plot. Regardless of what ending you choose, your time spent traveling around and killing the larger demons for their souls is solely to summon the Old One. You are functionally the avatar of the Old One, slaying demons to gain their souls and power. All Maiden Astrea and Garl Vinland know at that point is that a powerful being carrying demons' souls has wandered into their sanctuary and murdered a ton of people. To them, you are the living avatar of the Old One, of the god they worshipped before they realized that their prayers were in vain. They had hoped to flee far from the eyes of others and do what little good they could in a dark world without God. Instead, the avatar of their false god rains destruction upon their sanctuary, murders their flock, and then ultimately kills them as well. The best part of this bit of story is how it fits into either ending. If you put the old one to sleep then the murder of Astrea is a tale of horrible necessity, of committing a terrible crime to bring about a greater good. If you accept the Old One and become a true demon then the murder of Astrea is a tale of bloodlust and wanton destruction. Of a being so caught up in its lust for power that it will kill anyone and anything.
