I know this is very late but it's because when u want to solve a limit you replace the vatiable (h in this example) with the value it's approaching.. so h→0 you make h = 0.. hope this helps

i have a question, why do we use this to find the derivative? why cant we calculate it straight away? this seems like way more effort to find the derivative

thats so true. My calc exams in college require us to use the difference quotient but in hs, we just did the derivative straight away
