Beef Brisket Smoke Grilled on a Weber Genesis II E-310 Propane Gas Grill. The Texas Cheat method is used. A form of the Texas Crutch.

Instructions For 4 - 6 Pound Trimmed Brisket:
1. Inject with: 1 cup beef broth, 1/4 cup apple cider vinegar, 1/2 Tbs dry rub of choice, 1 ounce Worcestershire
2. Cover with dry rub of choice.
3. Cover in pan with foil and refrigerate overnight
4. Grill with Hickory smoke at 325 degrees F till 190 degrees, no mop
5. Texas Cheat, put in foil, make another batch of the injection mixture and cover the brisket with it in the foil and close the foil, so the liquid stays in.
6. Continue to cook at 325 degrees F till internal temp is over 200 degrees F.
7. Remove from grill.
8. Make a 3rd batch of injection mixture and pour some over the top of the cooked brisket before enjoying.
9. Place leftovers in an airtight container with the fluid and refrigerate after the meat is cooler.

You could close the valve on the tank to get to that 275 mark you actually wanted to cook at.

Been doing my brisket’s almost the exact same way for a few years. I pick out a prime brisket and take to the counter and the butcher cuts and trims it for me and it actually weighs out less and thus saves $! Love this method and great video!

i love seeing videos of people smoking on a gas grill. it can be done!! i have a 6 burner summit that i smoke on all the time. it can hold 225 all day with the 2 outer burners on low. i stack 2 layers of bricks on the rack and lay another rack on top of the bricks to bring whatever im smoking up into the heat zone of the bbq. the bricks also help with heat retention and even heat.

Appreciate your video, D. I was in the market for an upscale pellet smoker and stumbled upon a Weber II E-310 NG brand new for $300 bucks. Needless to say, I bought the Weber and not a pellet smoker. Like another poster already said, your video has saved me from ruining a perfectly good slab of meat.

D! I am 4 hours in with a brisket just over 5 pounds. I will be just a tad bit behind you temp wise at the 4.5 hour mark, but this is again a pound heavier. Everything seems to be on track. Thanks for your tips and videos. I also watched your igrill 3 install and it helped. Awesome.

This might be the best how-to video on smoking a brisket that I've seen anywhere. You covered all the steps, and all the details, from start to finish. You also showed all the little things that mean so much to doing this right, like the ambient conditions, the settings on the grill and thermometer, etc. It looks like the finished product was amazing too! Thanks for taking the time to illustrate this, I'm gonna try it this weekend on my Weber. Well done! The video, not the meat. :-D

Thanks for the informative video. I have an older Weber Genesis EP310 3 burner side control. Never smoked a brisket, but I have a whole packer brisket, over 12 lbs, that I'll be cooking this weekend. Going to be an extended cook time, but excited to try it. Your video is definitely a confidence booster!

I have found that wrapping wood chunks in foil and poking with a few holes is better than the smoke box. I just leave the chunks on top of the grate for everything I cook on the gasser. The foil makes it easy to clean up when the wood chunk has served its purpose after a few cooks. I also have a Kettle and a WSM. My 2010 EP-320 Genesis is much more convenient though. But, the horizontal burners suck for indirect cooking.

Great smoke job on the gas grill. Looks like this method actually works better than some of the grills with the built in smoke box. This method allows you to move that box wherever you want it.

Add a pan of water over the heat to help lower your temps. Also you can wrap your meat when you get to 160 degrees.

I've been looking into how to do a brisket on a propane grill, and this is easily the most informative I've found. My fiance is a huge brisket fan, and I've recently started playing around with smoke box like you used here. That's awesome! Hope that comes out perfect for you. A brisket is a lot of meat, so I know you want it to turn out good. You'll be eating good for a long time. And you may not want anyone else's brisket after this :-) . I've got a couple of Pork Butts/Shoulders smoking now for pulled pork. What's amazing to me, is that a thunderstorm came, still raining right now. And not only is the grill still running good, iGrill has not cut out on me either. I was worried iGrill might not work in heavy rain, I've never wanted it to get wet. But it's working good even in a big storm. Lord willing, video coming sometime next week.

Brisket turned out awesome! I got some slaw and corn on the cob to go with it.I hit it w the injection sauce before serving. It was on point! Doing the 4th right. I hope your pork turned out. You're my reference when it comes to smoking! Thanks man!

Glad that worked out. The pork is on its 9th hour, but in the foil (Texas Cheat/Crutch), so not much longer now. It took 8 hours to get to temp for that. And that's cooking 2 simultaneously. Got a late start, but it's all good. I just need to get enough sleep for church, should be able to, I'll just have to go without a shave :-D . Yea, this is the way to do the 4th right for sure! I was smoking some other food yesterday, stuff I've already posted videos for here. A neighbor came knocking, they were afraid my house might be on fire :-D . But really a house burned nearby recently, so they were just playing it safe. Kind of funny though.

I have Genesis 330 Natural Gas. By using not only grill valves but valve from gas feed I’m holding a steady 230 with smoke from 2 smoker boxes.

I just wanted to say thank you for a great video I’m cooking a brisket! You taught me a lot I thought I only had to put the wood chips in the first time and it would smoke the whole time which is why I did not get the smoke flavor I was looking for when I cooked my ribs now I know I have to keep adding wood chips especially when I’m doing a slow cook but thank you again for all your advice I’m gonna try another set of ribs tomorrow I’m gonna start them early and let them go all day at about 250 and just keep refreshing the wood chips so that it gets nice and smoky.

nice work D Grill. I been doing some smoking on my Genesis, mainly pork shoulders. Im going to try to do a brisket on it tomrrw. My Gen maintains around 250 at the lowest setting though. I think one suggestion i could give is put a water pan with hot water inside. I find it not only adds needed moisture, but also the humidity helps keep temps a little lower. thanks for the video brother

I've found the smoker box flaming has been the main source of additional heat. Hitting it with a water bottle sprayer does the trick. I have a video coming of a Smoked Sirloin Tip Roast, where I use it. This helps improve the smoke too.

Well that was pretty informative. I have been looking into doing some American style BBQ and smoking. I was wanting to try it on my gas grill to start with so this was a big help. I will be giving this a go.

If you do not trim the fat from it, you will not need all of those extra liquids and spices injected. I do like the technique using the the Weber Gen II though, I have the same grill.

Looks great! One thing you can try is turning your propane gas bottle down a little bit. I have a Genesis and that seems to help on low and slow cooks. I also noticed that almost every propane bottle is slightly different... I've had some that I could barely get to 500 degrees, and some shooting over 600, easily. Thanks for the videos!
