Recipe
Egg Curry
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Serves: 2-3
Ingredients:
2 Large Onions
3 tbsp Oil
6 Hard Boiled Eggs
1 Bay Leaf
1 Black Cardamom
2” Cinnamon Stick
Onion Paste
1/2 tsp Sugar
1/2 tsp Turmeric Powder
1 tsp Red Chili Powder
1 tsp Coriander Powder
1tsp Garam Masala Powder
1/4 cup Water
1 tbsp Ginger Garlic Paste
1/2 cup Fresh tomato Paste
1 tsp chopped Green Chilies
2 tbsp Tomato Puree
Salt to taste
1 cup Water
1 tbsp Malai/ Cream
1 Tbsp Ghee
1/2 tsp Red Chili Powder
1/8 tsp Nutmeg Powder
Method:
Peel the onions Grind the onions to a paste and set aside.
Prick the boiled eggs with a fork or make slits with a knife.
Heat the oil in a pan. Add the eggs and fry the eggs till golden on all sides.
Remove the eggs. Add the bay leaf and spices to the same oil and sauté till fragrant. Add in the onion paste. Fry on high heat for 4 minutes and then reduce the heat and sauté the paste on low heat for 7-8 minutes till golden in colour.
Add the sugar and cook further for 3-4 minutes.
Sauté for a few seconds. Add the turmeric, red chili powder, coriander powder, garam masala powder, water and ginger garlic paste. Mix well.
Add the tomato paste. Mix well.
Add the chopped green chilies, tomato puree and mix well. Sauté the paste till oil floats on the surface.
Add the salt to taste to the bhuna masala.
Add 1 cup water and bring to a boil. Add the fried eggs. Cover and cook on low heat for 4-5 minutes till oil floats on top again. Add the cream or malai and cook for 2-3 minutes.
For the final tadka, grate the nutmeg.
Heat the desi ghee. Add the red chili powder and the nutmeg powder to the ghee. Remove fro heat immediately and pour over the curry. Cover and set aside to absorb the flavours.
Serve garnished with coriander leaves.
