I make Dijon mustard. Brown mustard seeds are hotter than yellow. I think that's the kick you were missing. Great way to wing it and come up with a great solution!!

I make a spicy mustard with both brown and yellow mustard seeds. I add the seeds, fill the pint jar with vinegar and let it sit on the counter for a week. Then I pulse it through the blender and we have spicy mustard. My fellas LOVE it in potato salad and on grilled burgers. I'll never go back to buying prepared mustard.

If you want a KICK in it use brown mustard seeds! Those are so good and spicy gives a flavor of horseradish hint to it. I made that and added cranberries also. I didn't have an instant pot when I did this, but great to know! You could always use half regular and half brown seeds, so it isn't so spicy. I also did mine in tiny jars. I LOVE mustard of all kinds.

I made that recipe last year. I let it "cure" for about 3 weeks and the flavor was a little better. I also used my vitamix to blend until smooth, i wish i had made it a lot smoother, it remained slightly grainy until the last jar. It always tasted like it was missing something, maybe more wine and less water than the recipe calls for and more salt. I'll try allspice that was suggested in another comment. This was my first attempt at canning but not my last.

There's a sauté function on the instapot, instead of dirtying another vessel for cooking, just return the blended mustard slurry to the instapot and do a low sauté.

Mustard taste usually settles as it sits on the shelf. It’s more acrid fresh done and mellows after a month or so. Is why it is difficult to adjust seasoning by taste when fresh made. Love the IP hack.

I also like to use brown mustard seeds in the mix. I like a spicy mustard flavor. I use half of each yellow and brown.

I just HAD to run and throw this is my instapot! I was so happy I had all the ingredients and added a couple of allspice berries based on another comment here! Dijon is something I too have been wanting to make, but also like you, we don't use a lot of mustard so maybe in the summer I will do that. I really like the idea of using the Instant Pot. Super fast! Thanks!

I recently got a mustard from boarshead that I just cannot stop eating! It's a mix of yellow and brown mustard seed but also has horseradish. It's the best and has the perfect kick to it! I would maybe give horseradish a try next time, or even a dash of Worcester

Rachel, I was just thinking, you probably could have put some red pepper flake for your spice in the insta pot, that way it would blend up so you wouldn't get chuncks of red pepper flake. Bravo, I will be adding this to my canned food supply 😋, I've made BBQ sce, which I need to restock & I plan on making ketchup, I make relish, so why not mustard too.

I believe the ingredient you are missing for that "spicyness" is horseradish. You could also use tumeric.

If you make a few dishes of honey dijon chicken/pork, you can run through that mustard much faster, and it's great. :D
