Tried it this morning, since i used electric whistler, it is so simple to do, the texture is so interesting, nice ; ) I modified a little, I added apprx. 3 TBSP half half cream on 2 egg yolks(leftover, that is why I wanted to use) and made the yolk was easier to be whistled, the center was like souffle of my outcome!!
The egg soufflé omelets look really good 👍👏! How about also adding a little minced ham and finely chopped chives to the one with cheese? 🇺🇸

No, I am very sure you are wrong. Egg white is 90% water. You can add up to a teaspoon of water per egg without affecting the end result. You have to avoid any trace of oil. To relax egg white protein, you can add acid in form: lemon juice, vinegar or cream of tartar
