Hello friends! Today I'm sharing a quiet, slow dinnertime recipe and a little bit of my evening kitchen routine, as I restlessly wait for this baby to be born. I've been doing my best not to film or make content, but life feels a little strange without it, so the other day I decided to film using my new Caraway pans for the first time, and a recipe I often use when I'm at the end of my ingredients or just need to throw things into a pot and not be stuck cooking for hours in the kitchen. Recipes:
Chicken Soup:
1 onion, chopped
Several cloves of garlic, diced
1lb chicken tenders, breast, or whatever you have, cut into bite-size pieces
5-6 carrots, chopped
4-5 stalks celery, chopped
5-6 small potatoes, chopped
Rosemary, oregano, basil, and parsley, added to taste
Chicken bullion or chicken stock, added to cover (approx 6 cups)
Sautee onions and garlic until translucent. Add chicken at this stage, or you can dump whole tenders/breasts in and shred them later. Add carrots, celery, and steam while you chop potatoes. Once potatoes have been cubed, add all to the pot and cover with water + appropriate chicken bullion amount, or chicken stock. Season with salt and pepper and herbs to taste. Simmer for 1 hour or however long you'd like.
Biscuits (1950 Betty Crocker recipe)
mix 2 cups flour and 2-1/2 teaspoons baking powder, and 1 teaspoon salt. Cut in 1/4 cup shortening or butter. Mix in 3/4 cup milk.
Knead lightly. Roll or pat out about 1/2" thick. Cut. Place on an ungreased baking sheet and bake until golden brown at 450 degrees farenheit for 10-12 minutes.
