How do you break the glue joints on the sides for repair work so as not to damage them or the key bed?

It would be difficult. The piano is built in a way that it is not intended for it to be taken apart.

How do you remove the tone bars from the soundboard without ripping up the spruce? Heat and steam? I am looking to repurpose the spruce soundboards. Thanks.

Heat, steam, and a gentle hand should do the trick. A glue de-bonder for the stubborn parts can be useful. Thanks for watching!

A standard #2 tip on a tuning hammer would work to get the pins out.
