Hokkaido Hotate (Scallops) are a culinary delight celebrated for their exceptional quality and rich flavor. Harvested from the pristine waters surrounding Hokkaido, Japan's northernmost island, these plump and succulent mollusks are highly sought after in the world of seafood. Hokkaido's cold and nutrient-rich environment contributes to the scallops' remarkable sweetness and tender texture, making them a delicacy in Japanese and international cuisine.
First stop, Noan in Shibuya! This barbecue joint is known (and loved) for its generously sized platters, outdoor seating, and ‘tebura’ dining sets. Shizuka cools down with a refreshing lemonade before hitting the grill and tucking into a feast. On the menu? Hokkaido Hotate grilled in butter and soy sauce, grilled vegetables, and pulled pork tortillas.
Next stop, Two Rooms Grill Bar in Aoyama. Located on the 5th floor of the AO Building, this restaurant prides itself on high-end dining, premium ingredients, and quality service. Shizuka takes a seat and picks her poison (Chardonnay), then decides on the Teppan Grilled Hokkaido Scallops for lunch. As the dish is being prepared, we’re introduced to Matthew Crabbe, chef extraordinaire and founder of Two Rooms Grill Bar. Before she knows it, the dish is served, and Shizuka finds herself marveling at the beautiful presentation before tucking in.
Final stop, Sake Bar Le Pere in Nakameguro. This cool and cozy spot has a lengthy menu, but what will Shizuka choose? Hokkaido Scallops, deep fried and sashimi (raw), please!
Whether served raw as sashimi, lightly seared, or prepared in various other gourmet dishes, Hokkaido Hotate embodies the essence of the sea, delighting taste buds with its briny, buttery notes and earning its place as a true treasure of the ocean.

You can really tell the Australian chef does not understand where his scallops come from and why they come from there, he only knows the region’s name, basically he’s saying cause it’s famous/ well known that why I chose Hokkaido. Where as the Japanese chef really understands his ingredient, he gave thorough explanation.

Hokkaido scallops are the best! I just got back from Japan, from my honeymoon. Hokkaido was our journey and Otaru was our first stop. I tried a grilled soy sauce and butter scallop for dinner, then another for breakfast; both were exactly as described in this video! Their scallops are large, springy, meaty and sweet. Definitely try it out! 🤤👍

今日本の飲食業は外国人にも人気ですね 日本の食材に惚れる外国人も多いけどいろんなスタイルのミシュランの店が多い事も外国人にも人気なんでしょう 日本は面白い国でいろんなスタイルの飲食店で働いたり独立して自分の店出したりできるのも魅力なんでしょう でも美味しくない店やおもてなしがない店にはやはり客が寄り付かなくなるのでかなり厳しいところもあります そんな日本の飲食店文化はまだまだ楽しいところがたくさんありますよ もっともっと楽しんでくださいね❤

OMG!!! My favorite seafood! I just had some amazing scallops Thursday night. They are fresh flown in every day and harvested by actual scuba divers that hand pick off of the ocean floor! Now I want to try Hokkaido scallops! I'm drooling now. Lol!

Seafood needs to be frozen at -35c for 24 hours, or -20c for 7 days to make it safe to eat raw. Whether it’s ceviche or tuna tataki you should always use sashimi grade seafood to make any raw preparation. Anthony Bourdain’s favourite sushi restaurant Yasuda used a medical grade blast freezer to prepare his fish.

Thank you for this video ! Love scallops ! A question regarding bbq courses in Japanese restaurants : they often offer courses from around 5 or 6,000 yens and specify it is "from 4 persons". Is it the price PER person or for a group of 4 ? Thank you !

I wonder if this video was produced as China stopped importing Japanese sea food because of the release of Fukushima "Water" to the ocean. This channel liked to support or they were requested to support the scallops industry which was especially hit hard by that sanction. This is nothing but my pure assumption, but it seems to be so timely. I am not saying that this is wrong.

That second scallop dish was a full scam.. basically 20 AUD for 2 scallops with a bit of avocado puree and bacon "dust"... That first set was 50 and came with bulk scallops and other meats and veg plus the taco stuff... That third place was like $7 per 4 whole scallops TF? That being said the beer was 680 yen so they make their money back in other ways. Where beer is like $2 per at a bottle shop.
