So, I made a quadruple batch of these this morning which yielded me 12. Not sure if anyone has done a cost breakdown, but here is what I came up with for the ingredients I used. $3.80 per dozen wraps. I pay $10 per dozen wraps in the store. I'm not knocking the convenience of the Egg Life Wraps, and will probably still buy them at times, BUT this is a huge cost savings and I LOVE LOVE the added animal protein by using the beef gelatin over the xanthan gum. In my first attempt with these tortillas, I struggled with too thick of a batter which was lumpy as well. I could not form it into a thin circle before it started to set in a glob. It seemed like the gelatin would not dissolve, even after letting it sit to bloom for a minute and warming slightly in the microwave. I found a few things which helped me finally nail it: 1) I switched out my beef gelatin with a better brand (Vital Proteins purchased on Prime Days), and 2) I turned down my stove top burner heat to more of a medium setting. I hope my experience helps someone else. I know I always refer to the comments when I can't quite get it right!

@@puggychu No. It’s called “Vital Proteins Beef Gelatin”. In general, “collagen” is different than “gelatin”. Both are proteins but gelatin has a gelling agent in it…think like jello. Collagen (blue container) is used in drinks or in baking to provide a softening effect with added protein, while gelatin (green container) adds a flexibility effect.

Thanks for an amazing recipe, not sure if you've tried this yet so thought I'd share that this mix also makes the most amazing batter for prawns, fish, vegetables etc - almost like a beer batter when fried in oil. I use your measurements and let the mix sit for about 10-15 mins to really thicken up then add some salt and garlic powder, dip items in the batter and fry to golden brown.

I just cooked mine in a cast iron skillet with a small amount of bacon grease and they browned very nice. Added a pinch of Redman’s seasoning salt and filled with ham and cheese. Duh-licious! Thanks for this recipe. I’m thinking of all the ways I could use them now . . . Mmmmm

These wraps are so good!! I made them last night for supper, and my keto husband liked them very much! They're exactly as described: soft, pliable, unflavored. They are perfect for Mexican fillings because they allow all the wonderful flavors to shine! Thank you so much for this very informative and thorough video, and for all the experimenting that went into developing the recipe! I will say that it's important to add the gelatin BEFORE the egg white powder as shown in the video. I accidentally did it the other way, and I couldn't get the batter as smooth, and the wrap didn't have a smooth surface.

I can't thank you enough for sharing this. I have been making them and I added allulose to one batter and it cook brown and it turned hard and I put butter and cinnamon mixed with stevia and it was so good. I also made more and then milted keto chocolate chips on top with very fine chopped nuts and loved it. Thanks again. Game changer for me.

I just want you to know I did this recipe but cooked it in the microwave on a silicone round for about 3 minutes and it turned out well. The edges were a bit crisp but, I'll take it just to be able to eat a chorizo and egg breakfast taco again. I got two tortillas out it.

Indigo, these are seriously good!! I just made them for lunch. The only change I made to your recipe was adding 2 extra tablespoons of water to the mixture so I could swirl in the pan. Of course I had to cook about 30 seconds longer but they came out beautiful. And the Everything Bagel was the bomb. I appreciate a recipe that does not use xanthan gum which really grosses me out. I made a taco on this version today and I almost cried it was so good. Even better than the egg life wraps! Thank you! I made them in small non-stick skillet, corn tortilla size, with Knox Unflavored Gelatin. OMG! A question and a couple of successful trials. Trial One: Premixed Gelatin + Egg White for canister storage. By weight, I added 2 parts gelatin and 3 parts egg white. Put it in a canister and tumbled it up to mix well. Then, I dropped an unmeasured amount it into a bowl, added tap water, mixed and used. (Like Instant Pancake batter.) I tried it, and it worked! At first, I thought maybe it was going to be lumpy, but after the initial stir and about 5 minutes resting, it stirred up beautifully just like your original recipe. I did not measure the water, I figured that once stirred together, if one knows the consistency, you could just eye ball a bit more water or powder before the "resting". For me, having it pre-mixed means I'll make it more. (One has to tumble shake the canister to get them combined...I think the gelatin particles are heavier than the egg white.) Trial Two: Enchiladas, the Mexican country way. In Mexico, the word "enchilar" means that you've "chilied" something. It's often used like this: You briefly dip a tortilla, or a bread roll, into some enchilada sauce, shake the excess off a bit, and then you put it straight into a med-high skillet with lard or oil. It will sizzle and spatter, but it caramelizes the sauce to the tortilla and adds an indescribable dimension of complexity that you just can't get by pouring enchilada sauce over something. It's like 8 times more flavorful. SO, I put some enchilada sauce in a flat bowl...passed each side of egg white wraps through the enchilada sauce (coverage of sauce can be very imperfect), dropped it into the little frying pan with hot lard. First side, maybe 30-60 seconds, when it stops hissing, you can turn it over and you'll see the beauty. You can let it go longer, even, until you start seeing almost blackened spots...that is delicious, but it's to taste. The sauce and some of the fat will have absorbed into your tortilla. Just like that, with these wraps, they are actually plenty sauced and moist. Just roll them up around anything you want and eat at the moment, or make them in any enchilada bake...use less top sauce. It's ok to "enchilar" just one side of a bun or tortilla, too. No rules. I think it could perhaps be used with the buns you make, too! You can google " torta pambazo" to see how it's done. It's a method more than a recipe. Question: What do you recommend as the most cost effective form of egg white powder? It seems quite expensive to me. Sorry if you've already discussed this, I have not watched all of your videos. I saw you had a big canister full!

I didn't have egg white powder or beef gelatin. I combined two whole eggs, a package (7g) of unflavored gelatin, spread half of it evenly on a 9-inch silicone baking mat by doing a tilted roundabout with the microwave plate and microwaved it for a minute. It smelled like pork rinds out of the microwave, had a pretty neutral flavor, but all in all I'd consider that a success.

I too have not enjoyed other faux tortilla recipes because of the strong flavors of flax, coconut, psyllium, etc. I like Egglife wraps but they are pricey and I have only one option anywhere near me to purchase them. They only carry the original and occasionally the southwest flavor and are frequently out of both. I'm really thrilled to have a homemade option to try and flavor as I choose!

I love to have crepes on my birthday. My favorite filling is a mixture of 1 lb. breakfast sausage, 8 oz. of cream cheese, then shredded cheddar cheese to taste. Add the two cheeses after the sausage has been cooked. It should be a nice thick spreadable texture to rollup in the crepe.

I saw a recipe 1/4 cup egg white protein to 1/4 cup of water. I made them today and added Everything Bagel to the tops when they were cooking. It was a tad difficult to mix the batter but they came out nice. But the beef gelatin powder sounds interesting.

Love that you threw in rye and I am wondering how these might toast up into crackers in the oven , convection or air fryer with garlic, onion, chili powder or other things mixed in. I immediately ordered the gelatin to try this after watching the first sharing post. These are like thin crepes and as you stated could go sweet or savory rolled, layered, folded sauced, syruped, buttered, sprinkled. Additionally, cut into strips for lasagna, or perhaps across a mock apple pie crust, pinwheeled, baked, air fried, sushi rolls, layered with whipped filling between … uh la la … and it can be made at home which is perfect! Wonder if after they were made on the griddle then subsequently baked if the texture would be destroyed. Thank you so much for spending your time doing this and sharing it with us freely❣️

I followed your measurements to the letter but needed to add quite a bit more water as it was no where near wet enough. It was more 'crumby'. I don't know if its the egg powder that makes a difference or if your measurements are different 🤷♀️

Mine came out with a pretty solid amount of browning to it. I think I may have had the heat too high. I'll try to use the griddle next time (I just used a pan and stove top this go round) This recipe is amazing though, I think you could make your own line!

Thank you for your experiments! I just searched today, for Egglife wrap’s locally and couldn’t find any near here. So I did a recipe search and here they are! Can’t wait to try both recipes of yours. When and if you ever get a chance, could you please please do a copycat recipe for the choczero white chocolate chips?

OMG, these are so quick, easy & delicious! I made a triple batch and added some Mingle Whoops we forgot the bagel seasoning and it made 6 good size wraps. I put them in the fridge but couldn't wait until dinner so I just tried one with a slice of smoked lamb leg with a bit of gravy (leftovers from dinner last night) and it was absolutely delicious. I will be making these regularly.

fabulous!!! I made the real egg whites crepes today. I really like them. I cut them up and used them as noodles in soup. Actually, I put them in the toaster oven and crisped them up first. They turned out like those crispy noodles that you get in Chinese restaurants. Gives a really tasty texture to a soup. I will be trying these tomorrow. Also, I'm thinking these might work for cinnamon rolls. I tried making them with the egg white bread with moderate success. I will try it again with this. Thank you for all you do!!

Hi Nil ... just ordered the NOW brand beef gelatin so I can try these. As a T2D on insulin & hypothyroid, doing Keto/Vore PHD watching Dr Ken Berry & Neisha ... loving the different ways that I can still stay close to BBB&E. (Carol Ann, Medford OR)

Sams club just stopped carrying the 3 pack .. 😢. Came to find a dupe . Already ordered my ingredients and yes , cinnamon !! Will make those . My go to snack at the moment is cinnamon flavored egg wraps with nut butter . Rolled up , with my coffee . About 2-3 of them .. my appetite is nicely suppressed now that I’m back in keto / carnivore and I only want things that I’m craving . It’s got to be palatable and taste good . I go through spurts of cravings . But I’m not ready to give up my egg wraps just yet .
